Oh my goodness… chocolate chip and coconut cookies are life-changing… well that’s what I was told!

I know fall begins in September, and the weather starts cooling off, but where I live it really starts to cool down once November hits. But no matter when it cools off, Fall baking is all about comforting flavors like cinnamon, pumpkin spice, vanilla, maple, nutmeg, and let’s not forget the nuts, pecans, walnuts, pistachios, and of course the very popular peanut butter.

These rosemary chocolate chip cookies are full of delicious flavor! 

It’s Christmas in July… I’m not crazy but wanted to share these fun cookies with you and today seemed like the best day to do it.

They are filled with chocolate, all different types, and are full of fresh rosemary aroma and flavor. I topped them with sea salt flakes which brings the flavors together nicely.

I don’t just wait until December rolls around to make these.

These cookies have a nice crispy edge, chewy center, and the variety of chocolate which puts them in the over the top delicious category!

Really soft, warm, or melted butter will result in flatter, greasier cookies.

If you don’t mix the butter and sugars together well until creamy the result will be greasier cookies.

These cookies are full of all the warm fuzzy feelings you’ll want all winter long and in the summer, they are a reminder that great flavors should be enjoyed all year long!

There are a variety of mint flavors the two most common are peppermint and cream de Menthe, peppermint is stronger think… candy canes,

creme de menthe is often referred to as “green” mint, like in mint chip ice cream, shamrock shakes, the famous thin mint girl scout cookies, and one of my all-time favorite cookies, mint meringues.

These crispy and chewy rich delicious chocolate cookies filled with mint flavor, chocolate chips, and Andes candies. To say they are loaded with flavor is an understatement.

These Mini Chocolate Chip Cut Out Cookies are perfection on a plate.

Baking is therapy for me and there’s nothing I like more than a delicious sugar cookie cut out recipe – except when there are chocolate chips involved.

Crispy, golden bottoms, and chewy centers with melted chocolate goodness – this cookie is my go-to.

What makes this cookie so amazing is the no spread cookie dough that holds its shape while it bakes. It can be a real let down when you spend so much time cutting out shapes and designs, only to end up with a blob once the cookies are pulled from the oven. With my recipe, that won’t happen.

The balance is what you have to work on when you’re using an ingredient like Instant Coffee and this recipe has it down. Just two simple tablespoons of instant coffee will have these cookies tasting great and giving you a much-needed boost of caffeine as well!

I’m the one with the spoon in the bowl,

no matter if it’s cookie dough or cake batter, I want a taste!

This cookie dough is just that, the same great taste of chocolate chip cookie dough,

but no worries if you’ll get ta tummy ache. We’ve all heard we shouldn’t eat raw eggs, or raw flour, and will put all your worries aside.

You can enjoy it off a spoon or like me, portion it out to enjoy again and again.

Put some in the freezer, keep some in the fridge, put some in jars, and share it with a friend.

This delicious no-bake chocolate chip cookie dough is a sweet tooth’s lifesaver when you don’t want to turn the oven on, are tired, want a sweet snack, or have a cookie craving that needs satisfying!

I’ve heard that many times since they’ve become popular.

If you have an air fryer you’re going to love seeing all the things I tried with great results in the air fryer. If you don’t have one, you may just want to get an air fryer soon after seeing this!   

Let’s start with what an air fryer is, it is a small convection oven.

Since it’s small there is no preheating needed, it typically gets to temperature in about a minute.  

Convection simply means. That hot air will circulate and in turn, will cook food faster, sugars caramelize quicker for a crisp edge and oiled items brown nicely.

What should I make in my air fryer? I hear this question often, and my response is always, “just about anything!” I was gifted an air fryer years ago and never thought I’d end up using it as often as I do. I do not typically eat a lot of fried foods, but it turns out that an air fryer just makes things CRISPY without all the grease. I love crunchy and crispy, so I decided to see what foods could be made better by using my air fryer instead of my oven or stove. As it turns out – there are more than I imagined!

What Should I Cook in My Air Fryer?

I love using it for just about anything I’d cook in the oven. Some of my favorite things to make in my Air Fryer are French fries, chocolate chip cookies, veggies like Brussels Sprouts, taquitos, homemade tortilla,  chips, diced up Spam, frozen mini tacos, sausage, Rosemary Garlic Chickpeas, and tortellini or ravioli. The Air Fryer crisps up the tortellini and makes is perfect for dipping in marinara or Alfredo sauce.

What Is An Air Fryer?

Nonstick vegetable oil spray is great for quickly adding a bit of oil to things like Brussels Sprouts or French fries.

Should I Buy An Air Fryer?

An Air Fryer is great for anyone who wants a small amount of food cooked quickly. Because Air Fryers are small, they typically just make enough food to serve a couple of people. If you RV a lot, these are perfect for that, too! The small size is great for traveling and cleanup is a breeze. Air Fryers are also convenient for college students, single people, or anyone who frequently snacks on convenience foods.

How Can I Convert A Recipe to Make in the Air Fryer?

To convert any recipe to cook in an Air Fryer, start with the temperature you’d use in the regular oven, cutting the cooking time in half. Gently shake the cooking basket or turn the item over as necessary for even heating. One nice feature is that the timer stops when the air fryer is opened to check on the food, then it starts right back up when it’s closed.

Then I started thinking if I could make things I would normally eat CRISPY well that sounded more appealing to me. Brussels sprouts were at the top of my list to try.

I first started off making some prepared foods that my teen just loves. Wow were they crispy, they tasted better than baking them and they cook up so quickly now I don’t need to “help them” cook ( in other words do it for them as they think cooking takes to long, with the air fryer, they can do it all themselves.

YAY!!

It got me thinking about how many other people could benefit from using an air fryer. My kids were ALWAYS leaving the oven on… even when they were done using it. It was so frustrating! With the air fryer, it turns off when it’s done cooking.

Genius! 

Browning the butter only takes a few minutes and takes these cookies from good to great!  

I love bitting into a thick cookie,

even better when the chips are all warm and melted.

This is the perfect small batch, the recipe makes 8 large cookies. Which is great if you want a small batch and avoid eating over 30 cookies, or is that just me…

I have a self-control issue. Chocolate chip cookies are my greatest weakness, if I see them, I want them ALL!

About the brown butter, it really adds delicious flavor to these cookies. Kinda nutty, a perfect compliment to the chocolate. You can make them without browning the butter and they are great as well. I made many batches testing how they were both ways.

In a skillet over medium heat bring the butter to a boil and cook until it’s a deep golden brown. Browning the butter reduces the water in the butter and creates a rich deep flavor in the butter, adding a depth of flavor to the cookies.
