Cinnamon Raisin Cookies

Cinnamon Raisin Cut Out Cookies with Cinnamon Icing

Cinnamon raisin toast smells so yummy popping out of the toaster, I thought I’d give Cinnamon Raisin Cut Out Cookies and try and guess what? They smell just as yummy coming out of the oven. I iced them with a Cinnamon Icing, needless to say, they didn’t last long.

 Cinnamon Raising Cut Out Cookie Recipe {Printable}

1c unsalted butter
1 ½ c confectioner’s sugar
1 egg
2 tsp Vanilla Extract
2 teaspoons Cinnamon
¼ teaspoon Cinnamon Extract
2 ¾-3 c all-purpose flour
2 tsp baking powder
1tsp salt
½ cup Raisins chopped with 3 tablespoons powdered sugar

Cream together butter and confectioner’s sugar.  Add to this the egg and flavorings.  Sift together flour, baking powder, and salt, adding this mixture one cupful at a time to the wet ingredients.

Add chopped raisins. Mix until the dough forms a ball on the paddle.  Roll out on floured parchment paper and cut into desired shapes.

I adapted Callye’s Lemon Poppy Cookies to create these.

the tip for chopping raisins for these cookies is to coat them with powdered sugar so they chop easily and don’t entirely stick to the knife when chopping.

This also makes the raisins less moist, which is what I wanted. I wasn’t looking for a chewy oatmeal raisin cookie texture. The raisins add a great flavor and texture to these cookies. These cookies are one of my husbands favorites, he said they are like “crack” I could name them Crack Cookies, but I wouldn’t want there to be trouble when my kids bring them to school and say, “hey would you like one of my “Crack Cookie” you can see how that would most likely get me into trouble. And no there is no real crack in them, they are just addictive to eat!

Since the raisins are chopped it didn’t make it too difficult to roll the dough out.

The dough rolled out fairly smooth, making it easy to cut with a cookie cutter.

Bake the cookies at 400 degrees for 7-8 minutes. Cool cookies completely before icing.

Cinnamon Icing Recipe

1 cup powdered sugar
1 teaspoon corn syrup
½ teaspoon cinnamon
5 drops cinnamon extract
2 teaspoons water
6 drops white Americolor food coloring
Mix sugar, syrup, flavorings, and water along with food coloring until creamy. Add a drop at a time more water if needed until you get a smooth consistency.
Pipe icing on cookies with a piping bag with a #4 Tip and fill in the icing so the cookies look smooth.

    When I saw the title in my reader I was expecting to see a drop cookie. Imagine my sheer delight when I see that it’s a rolled cookie and even better, an iced rolled cookie!!! I love this recipe 🙂
