You know when you’ve had a meal and the next few days it’s all you can think about. Lasagna has that power!

If that happens to you, you’re going to LOVE this… this simple lasagna recipe will give you lots of options to enjoy it for longer than one meal! YAY, lasagna for days, nothing sounds better.

This recipe makes 2 trays, you can cut the recipe in half if you want, but trust me you’ll be happy you made two trays.

You can bake and freeze some, and keep it in the fridge to enjoy for days. Give a try to a friend or serve a large crowd. Each tray is 12 servings.

Lasagna layers are filled with beef, cheese, and pasta (lasagna noodles) baked to perfection with marinara sauce. 

There are so many options when it comes to the sauce, I prefer Barilla Marinara Sauce, White Linen Marinara Sauce (Costco sells White Linen), or of course Homemade Sauce.

Everyone will be diving into the sweet potato casserole with brown sugar topping!

Sweet potatoes are extremely popular around Thanksgiving this casserole is perfect. But there is no need to wait until Fall rolls around to enjoy it. This is great any time. A great side dish to ham, pork chops, and even a great side for grilled chicken.

Why is this the BEST Sweet Potato Casserole?  

As soon as everyone took their first bite, it was unanimous… they loved it. No matter if they prefer plain sweet potatoes or the syrupy type piled with marshmallows they rated this TOPS! Everyone said they want it again and prefer it to the syrupy sweet marshmallow version. But the good news is you could always add marshmallows to 1/2 the dish and broil for 2 minutes if you have some who just have to have marshmallows.

This has been put on the new rotation of side dishes for holiday meals. If that isn’t the most amazing response I don’t know what is. I’ve made it again and again and it’s a winner every time. Great with beef, turkey, chicken, and ham, so delicious and easy to make year round no matter what’s being served on the dinner table.

This sweet potato casserole is dairy free and can easily be made gluten-free and nut free.

For a alternative to pecans, use pumpkin seeds for a great crunch, or oatmeal could also be a great substitute, or use walnuts if you prefer them over pecans.

I made two trays of this meal,

one for us to enjoy and one to bring to a friend.

It was welcomed by all and got rave reviews.

The recipe is uncomplicated and feeds a crowd easily!

I rolled out some chicken meatballs, boiled up some ziti noodles and in no time at all I had trays of delicious comfort food that will please anyone.

I just love ground chicken and use it often to make chicken burgers, meatballs and to add to sauce to top pasta for a quick recipe.

How would you like a new GO-TO Casserole?

This Turkey Roll Up Casserole should go to the top of your must make list.

No need to wait until mid November to enjoy turkey, now you have have all the delicious flavor of a Thanksgiving meal ANYTIME you’d like.

And it won’t take all day to make.

It’s the Thanksgiving version of enchiladas!

With this baking in the oven, everyone is sure to drop what they are doing and come to the kitchen.

The deli counter will become you new best friend for this meal. Turkey at the deli counter has come a long way.

There are many varieties that have no preservatives or fillers, it’s just Turkey. Imagine that, you ask for turkey and you get turkey! GENIUS

Since this dish is covered in mashed potatoes, it has that hidden treasure quality to it.

My family anxiously awaits to see what is underneath.

But the wonderful aroma of it baking, kind of gives it away!

But they still like to guess what will be inside.

Adding this to your menu will have your whole family reminiscing about their favorite Thanksgiving dinner, what they like best about the day, what their favorite item is when they look at the giant spread of food. What they wished they had more often and well then the topic of DESSERTS comes up.

Who likes pumpkin pie, who prefer chocolate pudding pie and then they start thinking I magically have a pie in the fridge.

Maybe next time I’ll make the pie!

Turkey Roll Up Casserole

one dish meal that will have you craving it all the time

Servings 6

Ingredients

• 1 1/2 pounds oven roasted turkey or chicken I used the sliced thick version, I prefer the type that is most like real turkey/chicken with less additives
• 1 6 oz. package of turkey/chicken stuffing
• 1 1/2 cup chicken broth
• 1 tablespoon butter
• 1 tablespoon flour
• 3 cups mashed potatoes about 2 lbs of potatoes

Instructions

• preheat oven to 350
• line a 13X9 pan with parchment for easy clean up
• prepare the stuffing according to package directions
• roll two tablespoons of stuffing inside of each slice of turkey
• place the roll ups into the pan
• heat butter and flour and whisk in the chicken broth to make gravy,
• pour gravy on top of the turkey
• then cover in mashed potatoes (this dish is great when you have leftover mashed potatoes otherwise this sour cream and onion mashed potato recipe is great)
• spread the potatoes smooth and top with salt and pepper.
• bake for 20-25 minutes or until everything is heated through

I just love easy meals,

this is a new favorite in my house.

I haven’t always been the biggest fan of enchiladas. Crazy, right?

I realized I don’t like red enchilada sauce,  but I really love the green sauce.

This couldn’t be easier and more delicious. I’ve made it so many times and each and every time I make it everyone RAVES over it.

So what’s stopping you from making it, it’s easy… trust me!

You only need a few ingredients and in minutes you’ll be popping it into the oven… which makes this meal great for a Sunday dinner, prep it in the morning, enjoy your day and then bake it and gather everyone around the table for a nice meal. 

It’s the perfect weeknight meal too, and who doesn’t like a hot baked casserole dinner! 

Some variations on this could be that you like it spicier, so go ahead and add some sliced jalapenos. 

You can add in whatever item your family loves to make it your own. 

My family likes it just as the recipe is written, but go right ahead and use pork in the enchiladas if chili verde is your favorite, I have made it with pork and it’s yummy. My husband is always ordering chili verde when we go out for Mexican food and that is how he knows if he’ll like the rest of their menu… just by that one dish. 

Nothing is better than a creamy green sauce smothered over chicken and topped with cheese… right…

You can use any type of cooked chicken you prefer. 

I typically cook 6 pounds of chicken a week, I always have plenty on hand to whip this delicious dish up in minutes.

You can use rotisserie chicken, canned chicken or pressure cooked chicken like this.
