This is a quick and easy way to get dinner on the table fast.
Sauté half a diced onion, three cloves minced garlic in three tablespoons olive oil, then add a handful of quartered, cherry tomatoes (ten or so) Add dried oregano salt and pepper.
Once all items are heated throughly chop a bunch of fresh spinach and toss it in, you don’t need to cook it, the heat will soften the spinach nicely.
I like chopped fresh basil also and add it at the end.
Place over a hot bowl of spaghetti and add some grated Romano Cheese.
Perfect when you need dinner on the table quickly, it’s all done by the time the spaghetti is cooked.
