How to Grill Artichokes

I always loved when restaurants had grilled artichokes on the menu,
I could just about taste them even before they arrived at the table.
I now can enjoy them anytime….Here is how I Grill Artichokes accompanied by a fabulous sauce.

Now that I know how to grill them myself, I can have them anytime I’d like.

They are not so intimidating anymore!
I rinse the artichokes off and then cut off the stem,
cut off the top of the artichoke about 1 1/2 inches down,
then trip the ends (they tend to be sharp and can poke at you)
I cut those off with scissors.
Next I cut them in half.
Pull out the choke (the purple leaves that area poky and the fuzzy stuff too)
Place them in a steamer and squeeze lemon juice over them so they don’t brown, the quicker you can get the lemon on them the better.
Steam them for about 8 minutes, until tender.
I place them on the hot grill or a heated grill pan,
usually takes 5-10 minutes to get a nice charring on them.
Artichoke Dipping Sauce
1/2 cup mayo
1T lemon juice
1T mustard
1 clove garlic minced
two shakes Worcestershire sauce
6 drops Tabasco sauce
plenty of ground black pepper
Perfect combination!

I am going to have to try this technique. I've always boiled them and it's impossible for them to cook evenly that way because they keep bobbing up and out of the water. This looks SO good. Pretty much anything tastes good grilled:-)
