One taste of this coffee syrup and you will tempted to try it on just about everything!

Trust me, I did.

I love it on pancakes, on yogurt and well I have been known to mix it into a glass of chocolate milk too.

But really the possibilities are endless.

You are going to love it on ice cream too.

This coffee syrup is EASY to make and deliciously smooth and silky.

It only takes minutes to make and is super easy.

Bring the sugar and water to a boil, add in instant coffee, cinnamon, cloves, and extracts.

The butter flavor in this makes the syrup have a really smooth taste. I tried adding real butter to this, but it did not store well. It’s best to store the syrup in the fridge and the real butter  separated and had to be heated to mix in again. I really like the butter vanilla extract best in this.

It’s amazing how a little flavor of butter can make something taste so WONDERFUL.

This is the butter vanilla baking emulsion I use.

I don’t drink coffee, but having this on my morning yogurt with fruit is a favorite!

I did make some iced coffee drinks using this and it was great, I see my teen grabbing it out of the fridge often to put into iced drinks, smoothies and on ice cream. So it  has the teen approval over here.

And it just may be great drizzled over cake too, I think…I may have done that too, just saying!

How to make Coffee Syrup


  • 2 cups water
  • 2 cups sugar
  • 2 tablespoons instant coffee
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon butter vanilla extract or a 1/4 teaspoon butter extract


  • Bring water and sugar to a boil and cook until sugar is completely dissolved while stirring.
  • Add in coffee, cinnamon, cloves and extracts.
  • Allow syrup to cool and place in a glass bottle and store in the fridge.

Just what I needed, too, during the holidays when I splashed a little too much Kahlúa in my cocktails. 😉 It’s a fabulous syrup for baking but also for cocktail making when needing to infuse coffee flavor without too much alcohol with Kahlúa.   2. Can you use brewed coffee instead of the water & instant coffee?? Also how about using stevia or another sugar substitute for diabetic users??

    1. I’m sure you could use brewed coffee without any issues. I haven’t made this type of syrup with a sugar substitute, so I’m not sure on the amounts or the results, you’ll have to let me know if you try it out.

    Came across this while researching pancakes and I think I will have pancakes AGAIN! This seems like a great way to add some kick as well as save some $ since high quality syrup is pricey! Thanks for sharing.

  4. I used hazelnut coffee creamer in my pancakes and used this coffee syrup, just a bit less sugar, and it was awesome . Add a side of citrus to cut the sweetness.
