We love breakfast around here, and it’s not uncommon for me to whip up a batch of pancakes, eggs, and bacon for dinner.

Needless to say,  I’ve made my share of homemade pancakes.

I’m happy to say that I’ve finally perfected my recipe!

Not only are these pancakes made with super simple ingredients that you probably have on hand, but they are also light and fluffy and perfect for stacking.

I love pancakes, and since it’s come to my attention that there is a National Pancake Day, it only seems like the perfect time to share with you my perfectly delicious stack of pancakes!

Pancakes are a HUGE thing around here, and after making many, many batches,

I finally made them exactly the way I wanted them.

These are the perfect pancakes!

There are no fancy ingredients that you would normally have in your kitchen: flour, milk, eggs, etc.

You can enjoy a plate full for breakfast, or as my family likes, pile them up with some scrambled eggs and bacon for dinner!

It’s no wonder there are so many places that serve breakfast all day long… It’s yummy.

The ingredients are simple, and you typically have everything you need to whip up a great spread!

These pancakes are Not heavy or dense, so there’s no need to stop at just eating one.

Pile them on your plate and enjoy!

Common questions about adjusting pancake batter

1 cup of flour measured weighs between 4 1/4 =  5 ounces. That is about a 2-tablespoon difference.

Whether you scoop the flour into your measuring cup or scoop your measuring cup into the flour, you can easily adjust the thickness of the pancake batter if you need to by adding a couple of tablespoons to a quarter cup of flour to thicken, or water to thin the batter.

This batter is a little on the thin side, but rest assured that is what makes these pancakes light and fluffy.

Cook one pancake before you adjust the recipe.

If you want to adjust it, then do so after you have tried cooking and tasted a pancake, chances are you may like the recipe the way it is written.

This pancake batter is thinner than a boxed pancake mix and has quite a bit of leavening in it to result in fluffy pancakes.

My kids make this recipe with no help, their pancakes come out just like mine, nice and fluffy.

How can you keep all the pancakes warm so you can serve them all at once?

A tortilla warmer…that’s right.

I use a tortilla warmer to keep my pancakes warm.

I love having breakfast with my family. What I don’t like is when I’m finally finished cooking and sit down to enjoy it, my food is cold. It shouldn’t be that way for the cook, should it?

It used to happen often until I discovered that my tortilla warmer can keep my pancakes warm, and not just warm…HOT!

I found a couple styrafoam tortilla warmers on amazon. A large tortilla warmer and a smaller tortilla warmer it’s a 4 pack- so this optiosn my be a fun gift idea, you may be able to find them in grocery stores or Mexican markets near you, I find they are typically less expensive locally.

I haven’t used this style tortilla warmer but it might be on my list to get, I love wicker. Oh, this one is nice too. So many options. I don’t prefer the plastic style, I feel they hold too much moisture.

We eat a lot of pancakes, and my tortilla warmer holds 15 pancakes, and that is how many pancakes my recipe makes.

This tortilla warmer was about $6.00, prices have gone up over the years. So check around, you might find some in small markets. I love using it for more than just keeping my tortillas warm, and so will you.

I also line the tortilla warmer with parchment paper to keep the bottom from getting discolored. It’s great for keeping quesadillas warm, as well as scrambled eggs. Bread and rolls, cornbread muffins.

The possibilities are endless! That’s why I have two of them.

Alternatively, you can place the pancakes on a baking pan and keep them in a 200° oven until you finish cooking all the pancakes and are ready to serve them.

What Do I Do If My Pancake Batter Is Too Thick or Too Thin?

This homemade pancake batter is meant to be thin – it’s what gives the pancakes a light and fluffy texture! If you find that it is too thin for you to work with, add a bit of flour, one tablespoon at a time, until you have the texture you want. If the batter is too thick, add water, one tablespoon at a time, until the batter is as thin as you’d like.

How Do I Make Homemade Pancake Mix?

If you’d like to turn this recipe into a pancake mix to store and use later, simply whisk together the dry ingredients only. Store your pancake mix in an airtight container until ready to use. When using the mix you’ve prepared, simply add wet ingredients and follow the instructions in this recipe.

How Do I Keep Pancakes Warm Until I Am Ready to Eat Them?

To keep pancakes warm until serving, I like to use a tortilla warmer! The one I have only cost $6 and holds 15 pancakes, the exact number this recipe makes. Perfect! Alternately, you can heat your oven to 200, place pancakes in a baking dish, and cover with foil.

How Can I Make Chocolate Chip or Blueberry Pancakes?

To make Chocolate Chip Pancakes, sprinkle mini chocolate chips over the pancake batter after pouring it into the pan. I prefer this over adding them directly to the batter, so I can make sure the chips are spaced out in each pancake.

To Make Blueberry Pancakes, sprinkle fresh blueberries (or thawed frozen blueberries) over the pancake batter after pouring it into the pan.

Alternatively, you can top pancakes with sliced strawberries or any fresh fruit, as well as a canned pie filling, whipped cream, or chocolate syrup.

The Yummiest Pancake Recipe

Light and fluffy pancakes made in minutes with this homemade recipe. Serve them for breakfast or dinner, either way they'll be devoured.

Ingredients

  • 2 cups all-purpose flour
  • cup granulated sugar
  • 1 teaspoon salt
  • 1 ½ Tablespoon baking powder be sure your baking powder is fresh
  • 1 large egg
  • 2 cups milk
  • 2 Tablespoons butter room temp- soft or melted
  • 2 teaspoons vanilla

Instructions

  • Mix all dry ingredients together
  • Add egg, milk, butter, and vanilla, whisk until all combined.
  • Heat your frying pan, add a little butter,
  • Portion out the batter for what will fit in your pan, don't overcrowd the pancakes or they will run together.
  • I use a 3 Tablespoon scoop to make my pancakes and this recipe makes 15 pancakes of that
  • size.
  • Cook the pancakes over medium heat, pour the batter into a lightly oiled pan (or buttered) ), flip when bubbles appear on the edges of the pancakes
  • Once flipped it only takes a minute or two to finish cooking.
  • Place a lid on the pancakes after you flip them and they will produce fluffier pancakes.

Notes

*NOTE: it is 1 1/2 TABLESPOONS Baking Powder, not teaspoons that seem to be the common problem with people who are having trouble with the recipe and commenting that they are not working.

  4. I expected nice fluffy pancakes and instead ended up with very thin runny batter and thin flat pancakes 🙁 I followed the recipe exactly. The flavor was really good, I will try adding a little more flour next time.

    1. sorry you had trouble with the recipe, the batter is thinner that thick, but I did not have trouble with the pancakes fluffing up nicely. I use this recipe all the time with no issues. Did you use the recommended amount of batter for each pancake?

      If you haven’t tried 1 and 1/2 tablespoons of baking soda rather than tspoons, I really encourage it. Mine were thick and lite and fluffy even after giving my own flare to it. I think you will love the recipe, and dont be afraid to pile on the fruit and topping, it will hold up and not get real soggy.

    Thank you for posting this recipe. I have had such a hard time finding a healthy pancake recipe that was tasty and fluffy. These pancakes were awesome! The batter was thin but worked out just fine. I have a griddle that covers the front and back burner and used 1/3 cup as measurement for each pancake and made 4 at a time. Total, I got 13 pancakes out of it.

  8. Where can I find the tortilla warmer? Love the recipe! Mine were a little thin too but my whole family loved the flavor!!

    1. Where I live they are readily available where they sell tortillas in the grocery stores or small food markets. If they sell Mexican food where you live chances are you’ll find tortilla warmers, ask at customer service they will know where they have them. Also at Bed Bath and Beyond I believe I’ve seen them as well.

      I think the 1 1/2 tblsp. Of baking powder was a great idea ! I also added 2/3 cup of oatmeal and they came out so thick and beautiful even after adding slightly more water to compensate for moisture absorbed by the oatmeal until the batter was just thin enough to pour from a one cup measure so it spread in the pan. YUM ! they even held up to my home made thinner syrup. They don’t sog out. Oatmeal was originally just for a more wholesome pancake, but it worked in so well ! They’re very versatile ! Cant wait for fresh strawberries!

    These pancakes were so delicious, BUT they did not set properly on the pan and spread out too thin…the batter was very thin. Did I do something wrong? i really love this recipe and would love to use it if I could figure out the problem. Thanks 🙂

    1. I make these all the time, I’ve never had them get too thin. I use a flat pan or griddle to make them. The batter is on the thinner side, not thick, but I’ve never had any issues with it. My daughter makes them every week now and has even printed the recipe at friends houses she sleeps over to make them. So I’m trying to figure out what could have gone wrong and I’m not sure. Did you double check to be sure you used the proportions that were given? I’m sad for you they didn’t turn out, if you can think of anything that might be different let me know and I’ll try to troubleshoot with you.

    2. I’m sure that I followed the recipe corectly. They were so delicious that I’m not giving up on them. I’ll double check to be sure next time and maybe give the batter a couple of minutes to thicken…I’ll make them again soon and check back 🙂

    3. try cooking one pancake in the pan at a time, maybe there wasn’t enough room in your pan to cook them and allow them to spread. I cook 3 pancakes in a 12″ pan. Good Luck!

    4. I can’t get them to work. do you need to put the butter in the dry first? (before other wet) do you need to melt it though it says room temp? is it really baking powder and not soda?

    5. I had to add a least a 1/2 cup of flour to make them not spread…maybe check the numbers again ?

The numbers on the recipe are correct I make them all the time, I’m not sure why some have trouble with them being thin, but I use all purpose flour with the measurements in the recipe with NO trouble at all. There are so many variations in cooking and baking, some butter has more water than others as well. I have never had to add any additional flour and they always turn out like they did in the photos posted. I’m glad adding additional flour worked for you, as with all recipes some adjustments are OK 🙂 Enjoy

    8. It could just be the humidity! Depending on where you live, some recipes just turn out differently.

    9. I add the butter along with the other wet ingredients, no it doesn’t need to be completely melted. Yes Baking Powder, not baking soda. Baking powder is what makes them rise.

    10. I also had them go thin :-/ BUT they taste fantastic and I think next time I’ll use different butter and maybe my stand mixer. This is a keeper! I’ve been searching for the best pancake recipe and this is it!!! My son (10 months old) LOVES pancakes so I wanted to find one that I loved to, seeing as how we eat them almost every other day now, and this is it. I will try this again with the different butter and go from there but ohh they are so yummy!! Thank you for sharing!!

    11. Mine were also way too thin of a batter. I ended up adding at least am extra half cup of flour. I made them again and this time stopped adding milk when I got the right consistency (I think it was a cup and a half?). They were so delicious. I ended up making a TON and freezing them for quick breakfasts for the kiddos

She turned 8 last month. Tomorrow is our sons first birthday, so I may just have to throw a batch of this together and start back at #1 again. :o)

  11. Great idea on the tortilla warmer. I usually put them in the oven on warm, but if they’re in there too long they dry out. The tortilla warmer would work great for company too.
