How to Make Blueberry Salad Dressing
Ingredients
- 1 cup blueberries
- 1/4 cup avocado oil
- 1/4 cup white balsamic vinegar
- 1/2 lemon, juiced
- 2 teaspoons mustard, dijon or brown
- 1/2 teaspoon coarse kosher salt
- 1/8 teaspoon black pepper
- optional: sugar, honey, or maple syrup add 1-2 tablespoons if you want the dressing sweeter
Instructions
- Gather all your ingredients.
- You'll need a frying pan (or a microwave safe bowl) and an immersion blender or food processor.
- In a skillet, heat the blueberries on medium heat for 3-4 minutes, stirring until heated. They will plump and become glossy. Some may release juice. Or place in a microwave dish and heat 30-60 seconds.
- Place the blueberries and all remaining ingredients in the immersion blender mixing cup or food processor.
- Blend until smooth.
- Serve with salad. Store in the refrigerator.
- Press blueberries through a fine sieve. You don't want blueberry skins sticking to your teeth!
