Luau Cupcakes

July 19, 2010

These Luau Cupcakes are the ultimate in tropical flavors made of pineapple and coconut combined with a creamy pineapple frosting topped with toasted coconut and a piece of pineapple with a cherry on top. These SCREAM party!

luau cupcakes @createdbydiane.jpgIt seems like when the weather warms up it’s time for a Luau!

This is my solution to an easy and delicious party.

Luau Cupcakes are certainly a MUST!

Just one look at these and they SCREAM P-A-R-T-Y!!!!

Which should tell you one thing for sure they should definitely be on your next party dessert table!

These were a fun and colorful addition to a Luau Dinner I made for over 20 guests. Cooking for a crowd does have its challenges, but with a few tips and tricks it can come off without a hitch. I prefer to make the dessert a day ahead, but not this time. There was no time and everyone was made just hours before everyone arrived.

I just love how the toasted coconut and pineapple flavors go together.

The bright colors are so pretty it already looks like a PARTY has started.

These and a few other items will make any dinner or party a huge hit!

So break out the Leis and Tiki torches and get your Luau Party started!

We didn’t just eat cupcakes…

my LUAU Fried Rice

Make these two recipes for a SUPER flavorful combo that everyone will LOVE!

THIS is my favorite cupcake pan it bakes cupcakes nice and evenly without overcooking/browning them.

THESE are my favorite cupcake liners, they are greaseproof and look so pretty on cupcakes.

I use THESE piping bags and love them.

AND a really pretty drink that will go well with these and my other LUAU items are these Pineapple Margaritas!

You can make cupcakes from scratch with this recipe and use 1/2 cup pineapple juice with 1/2 cup milk or use some pineapple extract.

I looked through your blog posts and realized that I was with you eating all of that fattening food along side you. Not so good for the waistline! But, oh so fun and yummy!

    Hello Diane,

I was going to have a luau themed BBQ this weekend and I was interested in the recipe for your teriyaki burgers. I will be serving approximately 20 guests. We will also be doing your luau cupcakes.

Thank you for your great ideas.

      Hi Kelsi,
I grilled hamburgers and made the teryiaki sauce with soy sauce, brown sugar, corn starch, and juice from the pineapple. (if you like it spicy add some crushed red pepper, if you prefer mild you can add green bell peppers diced or no peppers at all)
Then grill the pineapple to put it on the burgers or you can add room temperature whole pineapple slices to them also.
      Have a fun party.
