Luau Ice Cream

Pineapple and coconut, one of my favorite flavor combos and once you see how EASY it is to make this ice cream, you’ll want to make it often!

Luau Ice Cream pineapple and coconut @createdbydiane

 

This is a true tropical delight,

it’s full of delicious pineapple and coconut flavor.

It’s downright irresistible, I just love all the pieces of pineapple in here and I added some cherries too. This has regular sweetened coconut nd toasted coconut take a look HERE on how to toast coconut in the oven.

There is NO ICE CREAM MAKER needed for this, it’s really easy and only takes a few minutes to prepare.

Whip up the heavy cream, add in sweetened condensed milk and either coconut cream or coconut extract.

Then mix in some sweetened coconut.

Layer the ice cream mixture with toasted coconut, pineapple, and cherries.

Freeze and then start scooping it out and enjoy!

Just think how fun it would be to be done with dinner and be able to open up the freezer and see this pan of yumminess just waiting to be served!

Often as we are doing the dishes one of mine will open the freezer to check and see if there is anything hiding… chances are very good and you should have seen their faces when they opened it up to see this!

Luau Ice Cream

Ingredients
  • 2 cups heavy cream
  • 1-14oz can sweetened condensed milk
  • 1/4 teaspoon vanilla extract
  • 1/2 cup pineapple chunks (cut into smaller pieces)
  • 2 tablespoons pineapple juice
  • 1/4 cup sweetened coconut
  • 1/4 cup toasted coconut
  • 12 maraschino cherries (cut
  • 2 tablespoons coconut cream or 1/4 teaspoon coconut extract
Instructions
  1. In a mixer on high whip heavy cream until stiff peaks form.
  2. While mixer is on low pour in sweetened condensed milk and blend together.
  3. Remove bowl from mixer, stir in 1/4 cup sweetened coconut, pineapple juice, add in coconut cream or extract.
  4. Layer ice cream mixture in 3 layers with 2 tablespoons toasted coconut and cut pineapple pieces and cut cherries.
  5. Freeze 4 hours.
