Around here, once mid-September hits, I officially declare it pumpkin time. I’m always ready for the cozy flavors of fall, and honestly, I’m surprised October hasn’t officially been renamed Pumpkin yet. There are just so many delicious things to make with pumpkin!

Once the cinnamon, nutmeg, and cloves start filling the kitchen, it feels like the happiest time of year.

But if you’re thinking, “Here comes another pumpkin cookie that’s soft, gooey, and kind of bland,” I’m happy to tell you: not these cookies!

I love a soft, moist cookie, but I don’t want my pumpkin cookies to taste or feel like pumpkin bread. Sometimes adding pumpkin to a cookie can make it overly soft and cakey, and you lose that wonderful cookie texture.

These are the kind of cookies I want when pumpkin season rolls around. Cozy, chewy, warmly spiced, and full of oats. Perfect with a cup of coffee or tea, and even better when the kitchen smells like cinnamon and pumpkin.

Ingredients

  • 4 tablespoons softened Butter
  • 1/2 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 3 1/2 cups oats, not instant
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup pepitas- roasted, shelled, and salted pumpkin seeds

Instructions

  • In a medium bowl, beat butter and sugars until creamy, then add pumpkin, eggs, and vanilla.
  • Mix in flour, oats, baking soda, pumpkin pie spice, and salt.
  • Use a 2 tablespoon size scoop to form balls, place them on a baking sheet lined with parchment paper.
  • Arrange Pepitos on top of each cookie. Bake at 375° for 10-12 minutes, until the cookies appear golden and are firm but not gooey on the outside.

  2. I SO agree with everything you said. I keep trying pumpkin cookies, but most of the time they come out too bread-like. It looks like you did it! These look chewy and…well…cookie-like. Can’t wait to try them. I made your pumpkin dip last year and loved it!
