We love breakfast around here, and it’s not uncommon for me to whip up a batch of pancakes, eggs, and bacon for dinner.
Needless to say, I’ve made my share of homemade pancakes.
I’m happy to say that I’ve finally perfected my recipe!
Not only are these pancakes made with super simple ingredients that you probably have on hand, but they are also light and fluffy and perfect for stacking.
I love pancakes, and since it’s come to my attention that there is a National Pancake Day, it only seems like the perfect time to share with you my perfectly delicious stack of pancakes!

Pancakes are a HUGE thing around here, and after making many, many batches,
I finally made them exactly the way I wanted them.
These are the perfect pancakes!
There are no fancy ingredients that you would normally have in your kitchen: flour, milk, eggs, etc.
You can enjoy a plate full for breakfast, or as my family likes, pile them up with some scrambled eggs and bacon for dinner!
It’s no wonder there are so many places that serve breakfast all day long… It’s yummy.
The ingredients are simple, and you typically have everything you need to whip up a great spread!
These pancakes are Not heavy or dense, so there’s no need to stop at just eating one.
Pile them on your plate and enjoy!

- This recipe is easy to make, really. My daughter has made this recipe numerous times, especially at sleepovers, since the age of 10! If a 10-year-old who never cooks can whip up delicious pancakes that everyone asks for seconds of, you can too!
Common questions about adjusting pancake batter
1 cup of flour measured weighs between 4 1/4 = 5 ounces. That is about a 2-tablespoon difference.
Whether you scoop the flour into your measuring cup or scoop your measuring cup into the flour, you can easily adjust the thickness of the pancake batter if you need to by adding a couple of tablespoons to a quarter cup of flour to thicken, or water to thin the batter.

This batter is a little on the thin side, but rest assured that is what makes these pancakes light and fluffy.
Cook one pancake before you adjust the recipe.
If you want to adjust it, then do so after you have tried cooking and tasted a pancake, chances are you may like the recipe the way it is written.
This pancake batter is thinner than a boxed pancake mix and has quite a bit of leavening in it to result in fluffy pancakes.

My kids make this recipe with no help, their pancakes come out just like mine, nice and fluffy.

Now for my tip on keeping my pancakes warm until I’m ready to eat them…

How can you keep all the pancakes warm so you can serve them all at once?
A tortilla warmer…that’s right.
I use a tortilla warmer to keep my pancakes warm.
I love having breakfast with my family. What I don’t like is when I’m finally finished cooking and sit down to enjoy it, my food is cold. It shouldn’t be that way for the cook, should it?
It used to happen often until I discovered that my tortilla warmer can keep my pancakes warm, and not just warm…HOT!
I found a couple styrafoam tortilla warmers on amazon. A large tortilla warmer and a smaller tortilla warmer it’s a 4 pack- so this optiosn my be a fun gift idea, you may be able to find them in grocery stores or Mexican markets near you, I find they are typically less expensive locally.
I haven’t used this style tortilla warmer but it might be on my list to get, I love wicker. Oh, this one is nice too. So many options. I don’t prefer the plastic style, I feel they hold too much moisture.
We eat a lot of pancakes, and my tortilla warmer holds 15 pancakes, and that is how many pancakes my recipe makes.
This tortilla warmer was about $6.00, prices have gone up over the years. So check around, you might find some in small markets. I love using it for more than just keeping my tortillas warm, and so will you.
I also line the tortilla warmer with parchment paper to keep the bottom from getting discolored. It’s great for keeping quesadillas warm, as well as scrambled eggs. Bread and rolls, cornbread muffins.
The possibilities are endless! That’s why I have two of them.
Alternatively, you can place the pancakes on a baking pan and keep them in a 200° oven until you finish cooking all the pancakes and are ready to serve them.

What Do I Do If My Pancake Batter Is Too Thick or Too Thin?
This homemade pancake batter is meant to be thin – it’s what gives the pancakes a light and fluffy texture! If you find that it is too thin for you to work with, add a bit of flour, one tablespoon at a time, until you have the texture you want. If the batter is too thick, add water, one tablespoon at a time, until the batter is as thin as you’d like.
How Do I Make Homemade Pancake Mix?
If you’d like to turn this recipe into a pancake mix to store and use later, simply whisk together the dry ingredients only. Store your pancake mix in an airtight container until ready to use. When using the mix you’ve prepared, simply add wet ingredients and follow the instructions in this recipe.
How Do I Keep Pancakes Warm Until I Am Ready to Eat Them?
To keep pancakes warm until serving, I like to use a tortilla warmer! The one I have only cost $6 and holds 15 pancakes, the exact number this recipe makes. Perfect! Alternately, you can heat your oven to 200, place pancakes in a baking dish, and cover with foil.
How Can I Make Chocolate Chip or Blueberry Pancakes?
To make Chocolate Chip Pancakes, sprinkle mini chocolate chips over the pancake batter after pouring it into the pan. I prefer this over adding them directly to the batter, so I can make sure the chips are spaced out in each pancake.
To Make Blueberry Pancakes, sprinkle fresh blueberries (or thawed frozen blueberries) over the pancake batter after pouring it into the pan.
Alternatively, you can top pancakes with sliced strawberries or any fresh fruit, as well as a canned pie filling, whipped cream, or chocolate syrup.

The Yummiest Pancake Recipe
Ingredients
- 2 cups all-purpose flour
- ⅓ cup granulated sugar
- 1 teaspoon salt
- 1 ½ Tablespoon baking powder be sure your baking powder is fresh
- 1 large egg
- 2 cups milk
- 2 Tablespoons butter room temp- soft or melted
- 2 teaspoons vanilla
Instructions
- Mix all dry ingredients together
- Add egg, milk, butter, and vanilla, whisk until all combined.
- Heat your frying pan, add a little butter,
- Portion out the batter for what will fit in your pan, don't overcrowd the pancakes or they will run together.
- I use a 3 Tablespoon scoop to make my pancakes and this recipe makes 15 pancakes of that
- size.
- Cook the pancakes over medium heat, pour the batter into a lightly oiled pan (or buttered) ), flip when bubbles appear on the edges of the pancakes
- Once flipped it only takes a minute or two to finish cooking.
- Place a lid on the pancakes after you flip them and they will produce fluffier pancakes.

yes, you can half the recipe and use the 1 egg, or make all the pancakes and refrigerate or freeze them for another day 😉
Every time I make these they tase AWSOME! But the first one I do looks funny…every time. But still Tases AWSOME!
The “first” pancake or waffle usually is a little different it has to do with the butter/oil in the pan, there is more of it on the first one.

I only made half of the amount because we’re only two ( I wisked the egg and added half of it)

I tried to make these this morning, doubling the recipe to make sure it was enough for my family. Unfortunately, the batter was far too thick and strangely gummy? I rechecked the recipe and my baking powder expiration date and nothing was amiss. I added an additional cup of milk to help, but it just wasn’t working. I had to scrap the entire thing because they just weren’t cooking correctly. Everybody has had such great luck with these, so I’m just wondering if anyone has any tips for what went wrong? I’d love to try these again!
I’m not sure why it would be so thick. Be sure you are measuring your flour level in 1 cup measuring cups-twice for 2 cups, and two cups of milk.along with the other items. The batter is on the thinner side, not the thicker side. If you need to adjust any recipe, not just this one, begin by adding a tablespoon or so of the liquid to get it to the correct consistency, a cup would be far too much.

Ok, my family and I LOVE love love this recipe. They are so good. I will never use a box again. My only problem (although its not really a problem cause we love them anyway) is that they always come out a little flat. I follow the recipe exactly. Except maybe in my fear of mixing it too much I leave the butter kind of chunky in there. How do you mix the butter in? And do you mix just a very little or until smooth? What kind of heat are we talking about- high/ medium high? Either way – flat or thick- they are so good!! Everyone needs to try this!

I’m tried this recipe tonight as we are doing breakfast for dinner (yay!) and they are fantastic. I quickly mixed up a second batch so I have pancakes to reheat in the morning, they were that delicious.
The portion you are referring to is a note, it’s about weighing ingredients one cup of flour weighs between 4 1/2 -5 oz (which is about 2 tablespoons difference) The recipe calls for 2 cups of flour and that is the amount to use if you measure in cups. Alternatively, if you weigh your ingredients I mention you can add additional flour as needed. But I would cook one pancake before adjusting the recipe. The batter is thin and puffs up nicely.
Made this morning they were not as fluffy as I was hoping for. I wonder if maybe baking powder is not a newer can might do this? Be sure to check expiration date of can mine was old.

WHERE CAN I PURCHASE A TORTILLA WARMER?
I am able to find them at the grocery store where I live, in the kitchen gadget aisle or near where they sell tortillas. (Walmart/Target and stores like that sell them as well) I prefer the styrofoam type vs the plastic type 🙂
These were delicious and indeed very fluffy! The only thing I did different was use 2 tbsp of vegetable oil instead of butter because I was out of butter and they still fluffed up very nicely. Thanks for a great recipe!

I haven’t. I have made the pancakes and reheated them many times as that means I have no clean up the next day 🙂

After trying 3 or 4 other homemade pancake recipes, this one was awesome. My kids love em. I melted the butter before I put it in and it still turned out delicious and fully.
These were so good! I discovered when I set the stove to medium, then my pancakes turned out flat. When I set the stove to low-medium heat, they turned out fluffier as they were cooking slower and longer. I’m not sure if it’s because of high elevation, or what. But they turned out great! Thanks for a good and trusting recipe! Love it!
Pancakes had AWESOME flavor. I could not get mine to be thick and fluffy! I even added a little more flour to them. The batter was thin and kind of runny! Excellent flavor just wish I could figure out thickness. I will try adding a bit more flour.
the batter is thin, but when I cook them the baking powder puffs them right up. If you are still having trouble a little more flour should help.
great, easy recipe. I wanted a new recipe, and found the link on Pinterest. Pancakes came out perfect. I added 2 purée bananas to some of the mix and it worked well.
