Mini Cranberry Pecan Pies

Southern Comfort…
Pecan Pie is known to be a southern comfort food, right?
These little babies are double Southern Comfort food then!

{Southern Comfort is a fruit spiced bourbon that originated in New Orleans}

Along with Pecans and Cranberries, there is even “Southern Comfort” mixed in!

I love that there is graham cracker in each bite!
These are really the ONE most requested item from everyone in my family. I’ve made batches and batches of these. They are always a WINNER,
the flavor is amazing,
and everything baked with BOOZE is so yummy!

I love pecans and cranberries and these are the perfect combo of sweet and savory and a little tangy too!

The perfect snack size! These are made in a regular size cupcake pan. They have just the right amount of crust and filling in each bite!

Mini Cranberry Pecan Pies
 
Ingredients
  • Crust:
  • 2 cups graham crackers crumbs
  • 8 tablespoons melted butter
  • ⅓ cup sugar
  • Mix graham cracker crumbs with butter and sugar (use a fork or a pastry cutter to blend it all well)
  • Filling:
  • ½ cup flour
  • ½ cup Southern Comfort
  • ¾ tsp cinnamon
  • 1 ½ cups pecans toasted
  • 1 ½ cups cranberries
  • ¾ cup light corn syrup
Instructions
  1. Crust:
  2. In a cupcake pan that holds 12 cupcakes, put 3 Tablespoons of graham cracker mix into each area. Press it in with a small fondant rolling pin, the back of a spoon will work also.
  3. Filling:
  4. Mix flour with Southern Comfort and cinnamon.
  5. Toast 1½ cups chopped pecans over a med heat,
  6. the taste of them toasted makes them so delicious.
  7. Put the toasted nuts in a bowl with cranberries and light corn syrup, then pour flour mixture on top and stir to coat well.
  8. Put 3 tablespoons filling for each mini pie
  9. (I use a large scoop,it hold 3 T and makes it easy to portion out the crust and filling as well as cupcake) the cranberries will cook down so it’s okay to pile it up.
  10. Bake at 350 for 25 minutes

I cooled them in the pan before removing them.
I then took a firm spatula and went around the sides to make sure they would release easily, they did!
I shared this one, but really no fork is required for this yummy deliciousness!
The tart taste of the cranberries along with the pecan pie taste made it the perfect combination.
Not too sweet, not too tart!
I had one for breakfast.
It has fruit in it 🙂
Southern Comfort has a sweet fruity-ness to it and it compliments these mini pies so well!
These will certainly be making an appearance on the dessert table this Thanksgiving along with Cranberry Cheesecake Pie.

      yes bake then at 350 for 25 minutes. Southern Comfort is a Bourbon, a sweet liquor

    Looks delicious! Did you cook the cranberries at all before adding them to the filling mixture or were they raw? They appear cooked in the picture…

    Should the cupcake pan be prepped in any way (greased, non-stick spray)? I guess cupcake liners could work as well…

      I did no put anything in the cupcake pan prior to the crust, they came out beautifully. No greasing or papers needed 🙂

      I baked them in the regular cupcake pan, (mini pies because they are not the regular size of a pie) if you tried to make them in a mini cupcake pan I think it would be difficult to get the crust to stay and there wouldn’t be enough filling in my opinion. These are a FAVORITE here and I get asked to make them often, my dad loves them.

    Love the recipe, however, is there another liquid I can use instead of the Bourbon? We are all non-drinkers and I have to bourbon.

      The alcohol does bake out, the taste is absolutely delicious.(Liquor stores sell tiny bottles if you don’t want to purchase the large bottle) There is no substitute that comes to mind really, but you could try coffee, rum extract, or chocolate flavor if you prefer another taste all together even water with vanilla extract I’m sure would work, even maple syrup, but it won’t give you the depth of flavor that the Southern Comfort does.
