The weekend is almost here so get a head start,

grab a few ingredients and make this super delicious and easy dip.

It’s smooth and creamy and great for dipping chips, pretzels, and veggies.

and if you make a double batch it’s really great the next day cold on a bagel, trust me….yummy.

Someone I know even likes to dip popcorn in it.

ok, let’s just say the possibilities are endless.

I am such a big snacker that having an easy recipe that can be made in minutes like this is great, I usually have all the ingredients, which makes it even easier.

So what are you plans this weekend? Will you be relaxing by the pool, or having fun at the beach, it seems summer is in full swing and there is no better time to get out and enjoy.

If you’re not heading outside….I’m sure this will go very nicely beside the remote too. After all, I’m sure there is something sports related on TV, they seem to have a dozen or so channels if that’s your thing…

me, I’ll be the one lounging by the pool, been looking forward to it all week!You should print this recipe out….and maybe even tape it inside your cabinet so you have it at the ready…..before long it will be football season and this will be just perfect!

What goes great with this beer cheese dip?

Everything… OMG, it’s so yummy. Dip some chips, pretzels, bread, crackers, veggies like carrot, celery, peppers, zucchini, fried tortellini, pretzel bread, pita chips, and add some grapes.

Add in some diced jalapenos for a little zing!

Beer and Cheese Dip

Ingredients

  • 6 oz beer
  • 4 oz cream cheese
  • 1 1/2 cups grated cheddar cheese I used Kerrygold Dubliner
  • 1 scallion diced
  • 1 *jalapeño diced optional
  • 1 tablespoon olive oil

Instructions

  • In a medium saucepan on medium-high place oil and scallions, {add in jalapeño or some crushed red pepper if you like it spicy)
  • then add beer and cream cheese and whisk until smooth
  • add in cheddar and whisk and return to heat for a minute
  • Serve warm for dipping or cold it will easily spread onto crackers

Notes

I typically use Coors light beer when making this recipe. The flavor comes through nicely without overpowering the cheese.
