Ingredients

  • 1 16oz canned pineapple or fresh (drained) any variety, tidbits, chunks or rings
  • 1/2 cup sweet peppers, chopped (red, orange, yellow)
  • 1/2 cup onion, I like white, use any onion variety
  • 1/4 cup chopped cilantro
  • 1 jalapeno, finely diced Use as much or as little as you prefer
  • 1-2 whole lime, juiced depends on how much juice they render.
  • 1/2 teaspoon coarse Kosher salt add more if desired

Instructions

  • Chop the drained pineapple into small pieces.
  • Add all ingredients into a bowl and stir well to combine.
  • Place in fridge until cold. The flavors will meld together. This can be made a day ahead.
