- 1 16oz canned pineapple or fresh (drained) any variety, tidbits, chunks or rings
- 1/2 cup sweet peppers, chopped (red, orange, yellow)
- 1/2 cup onion, I like white, use any onion variety
- 1/4 cup chopped cilantro
- 1 jalapeno, finely diced Use as much or as little as you prefer
- 1-2 whole lime, juiced depends on how much juice they render.
- 1/2 teaspoon coarse Kosher salt add more if desired
Chop the drained pineapple into small pieces.
Add all ingredients into a bowl and stir well to combine.
Place in fridge until cold. The flavors will meld together. This can be made a day ahead.
