Cheesy Bacon Potatoes in 5 minutes @createdbydiane

I love having a big breakfast on the weekends. My typical breakfast on weekdays is…

eat… and run.

It’s great to sit down and relax with a hearty breakfast.

My ideal breakfast would always include potatoes. Since I’m not so great at planning it out, either by precooking my potatoes or by getting up early to cook them, I don’t enjoy them as often as I’d like.

Until now.

Frieda’s sent me a sample of potatoes from The Little Potato Company I had no idea just how cute they would be.

Not only are these potatoes cute, they cook up so quickly they were done before I knew it. They come pre-washed and there is no peeling required. One bag is 1 1/2 pounds. They do come in different varieties and colors. I used the Piccolo which are creamy and smooth yellow potatoes.

Would you believe that my Cheesy Bacon Breakfast Potatoes were done from start to finish in 5 minutes?

There are many varieties of small potatoes available, as long as they are small they will cook quickly and easily and be perfect in this dish.

Cheesy, Bacon, Breakfast Potatoes

3/4 pound potatoes

1/2 cup cooked crumbled bacon

1/2 cup shredded Mozzarella Cheese

2 scallions diced

1 Tablespoon oil

I microwaved half a package of Piccolo Potatoes for 2 1/2 minutes. I sliced them in half and added them to a heated pan with a tablespoon of oil with two diced scallions and bacon. I purchase a bag of this great bacon at Costco and love how I can add bacon quickly to any recipe. I then added on shredded Mozzarella Cheese, place a lid on it for the cheese to melt quickly turn the potatoes over to brown the cheese a bit.

I love the crispy cheese on these potatoes and the great flavor of bacon and scallions. Freida’s told me these potatoes are available at Ralph’s. I shop at Ralph’s often and will be keeping my eye out for them. Here is you chance to try these little cuties:

Frieda’s is on Facebook if you’d like to keep up to date with their specialty produce. If you recall I made Crepes with eggs and bacon with Frieda’s Crepes.

disclosure: I was given potatoes from Frieda’s but the opinions are my own. I can’t help it, I just love these little potatoes and couldn’t wait to share them with you.

    1. Hey Paula, I asked specifically about it only being in the US. Was thinking of you sweetie ๐Ÿ™‚ Breakfast for dinner is always good!

    1. Barbara you are the winner of the potato giveaway! I am emailing you now ๐Ÿ™‚ Congratulations

  1. This sounds like something my boys would enjoy. We roast potatoes with olive oil, or sometimes I just cook them, then smash them and pan fry them with some olive oil, onion and garlic.

    1. oh I just love potatoes and with olive oil ๐Ÿ™‚ yum! I’m making more potatoes tonight…maybe I’ll do them with onion and garlic, great idea.

  2. I’m not entering your giveaway, because I also received potatoes from Frieda’s. I am enchanted with their little-ness. Your Breakfast Potatoes look really good, especially with the bacon.

  3. My daughter had been asking quite a bit lately for her daddy to make breakfast for us and these would be great to make the fried potatoes that his mamaw always made for him. They’re not good for you much but they sure are super yummy. I would replace the oil with water to make them and make them much healthier. Yep, that’ll work. Shhhh, lol.

  4. Well you had my mouth watering so I want to try your Cheesy, Bacon, Breakfast Potatoes recipe!
    Sounds and looks Amazing !

  5. I would love the multicolored fingerling potatoes shown on the website. I recently went on a trip to Eureka Springs, Arkansas. While there I ate in an underground restaurant called Mudd Street Cafe. They served a breakfast potato casserole there, it was amazing. Photo on my blog, I’d try to replicate that recipe with those potatoes.

  6. Yummy! Those breakfast potatoes look delicious! And, I cannot wait to try them for a lazy, long weekend breakfast.

  7. I would some make the breakfast potatoes. We love having eggs and potatoes on Sunday mornings.
    Thanks for the recipe.

  8. I would use them to make smashed potatoes. Last night I tried to make them and failed. Apparently I didn’t boil them long enough. So I ended up frying them, which didn’t work out well either. My chicken was done ages before the potatoes. Sigh, it was frustrating. But I think those would work well to make delicious crispy smashed potatoes. ๐Ÿ™‚

Btw, I’d devore those breakfast potatoes. Forget eggs. Give me potatoes any morning.

  9. This is a great choice of ingredients! I love using scallions in dishes like this.

For the potatoes, I would boil them in Cajun (crab boil). Remove them from the water and sprinkle with sea salt. Nice and simple!
