Small potatoes: Choose small potatoes that cook quickly. There’s no need to peel them.
Cooked bacon: Crumbled bacon adds smoky, savory flavor. Keeping cooked bacon in the refrigerator makes this recipe even faster.
Mozzarella cheese: Shredded mozzarella melts beautifully and creates those delicious cheesy bits in the skillet.
Scallions: These add a fresh onion flavor that complements the bacon and cheese.
Oil: A little oil helps brown the potatoes and crisp up the cheese.

My daughter had been asking quite a bit lately for her daddy to make breakfast for us and these would be great to make the fried potatoes that his mamaw always made for him. They’re not good for you much but they sure are super yummy. I would replace the oil with water to make them and make them much healthier. Yep, that’ll work. Shhhh, lol.
