Sometimes I’m just too tired to think of dinner, let alone actually preparing it.

Sometimes I’m not only too tired, but the remodeling mess makes meal preparation even more daunting.

Add to that the disarray of my kitchen.

Imagine taking everything out of your kitchen cupboards and drawers and placing it all in the family room.

Now you get the picture of what I’m dealing with.

Meal prep has been a challenge.

So when I spied my Crock-Pot in the cabinet, I decided to put it to work.

Let me tell you, I couldn’t have been more pleased with this chicken recipe!

It was absolutely delicious.

I started off with chicken legs because they lend themselves well to slow cooking.

They come out tender, and the meat literally falls off the bone, oh so yummy!

I was craving Asian flavors with a hint of spiciness.

Soy sauce and Sriracha sauce to the rescue, creating the perfect sweet and spicy flavor profile.

If you’ve never used Sriracha, this is a great time to try it. It’s an intensely flavorful sauce made with chili peppers, vinegar, and garlic. It’s spicy, but you can add more or less to the recipe depending on the level of heat you desire.

But don’t skip this ingredient, because it lends so much flavor.Once you try it, you’ll know why it’s so popular!

I cooked the chicken on high for 3 1/2 hours. You can cook them longer on low.

The delicious smells floating through the house. We couldn’t wait to finish our work so we could dig in.

I spooned the chicken legs over rice, and my family just devoured it!

Sweet and savory and super delicious! I’ve already made this a few times we love it THAT much!

This is the perfect meal to bring to your next big family gathering or potluck, too. But be warned, you’ll need to print out multiple copies of the recipe to hand out!

Sweet and Spicy Slow Cooker Chicken

Ingredients

  • 12-14 chicken legs 4 lbs
  • 1 1/2 cups brown sugar
  • 1/3 cup water
  • 1/3 cup soy sauce
  • 1/4 cup Chinese vinegar
  • 2 tablespoons sriracha
  • 1 tablespoon minced garlic
  • 2 teaspoon minced ginger
  • sauce thickener:
  • 1 tablespoon corn starch
  • 1/4 cup water

Instructions

  • Mix brown sugar, water, soy sauce, vinegar, sriracha, garlic, and ginger together.
  • Place chicken legs in a slow cooker, pour sauce over the chicken.
  • Set slow cooker on high for 3 1/2 hours.
  • After the 3 1/2 hours, remove chicken from slow cooker and place the sauce in a saucepan and bring it to a boil.
  • Mix cornstarch with water and pour into sauce.
  • Simmer sauce on medium-low for 15 minutes.
  • Allow sauce to cool for 5 minutes, it will thicken.
  • Spread the sauce over the chicken legs.
  • Garnish with green onions and sesame seeds.
