S’more Coconut


S’more Coconut
Nothing tastes better than
  toasted coconut
Unless it’s a
S’more Coconut Cupcake
A rich chocolate cupcake
 with 7 minute marshmallow frosting
 edged with toasted coconut
 topped with graham cracker crumbs
 and a nice
Kiss on top!
They’re so good you’ll want S’more!
Perfect Chocolate Cupcakes
1 cup unsweetened cocoa
2 cups boiling water
2 3/4 cups sifted flour
2t. baking soda
1/2 t. salt
1/2 t. baking soda
1 cup butter
2 1/2 cups sugar
4 eggs
1 1/2 t. vanilla
In a medium bowl combine cocoa and water mixing with a whisk until smooth. Cool completely. Sift flour with baking soda, salt, and baking powder.
Preheat oven to 350 degrees.
Beat on high butter, sugar, eggs, and vanilla 5 minutes.
On low blend in flour mixture and cocoa mixture
Do Not Overbeat
bake approx 12 to 15 minutes

7 Minute Marshmallow Frosting
2 egg whites
6 T. cold water
1/2 pinch salt
1 1/2 cups sugar
1/2 t. cream of tarter
In a double boiler with the water boiling blend all ingredients
then beat with electric beater (while still over boiling water)
until stiff peaks are formed. It takes 7 minutes.
On low beat in
1 cup mini marshmallows until melted.
remove from heat and add 1 t. vanilla.
