Mint Chocolate Chip Donuts

These Chocolate donuts have a wonderful flavor with the addition of nutmeg and cinnamon.

I enjoy making baked donuts, they are fun and easy to make. The flavor ideas are endless. Some recipes I cut out all the butter, the texture does change. Just be aware if you reduce the fat the texture is chewier. Do not over mix or the donuts will be chewy as well. Use room temperature eggs, so that the donuts do not taste dry. If you are using a dark pan to cook them in set your oven to 325.  All these tips should help you to create a better tasting baked donut.

 

These can be made as chocolate donuts, or chocolate mint donuts. The icing is mint flavored, if you love mint then add it to the batter as well. If you love chocolate donuts, but aren’t the biggest fan of mint. Omit the mint extract and ice them with green colored icing that is vanilla flavored.

 

Chocolate Mint Donuts
1 cup flour
2Tablespoons dutch cocoa
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup sugar
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 teaspoon salt
2 Tablespoons butter (softened)
1/4 cup buttermilk (I use dry buttermilk with skim milk){I also use dry buttermilk for my red velvet cake}
1/4 cup fat free fage yogurt
1 teaspoon peppermint extract (or vanilla if you would like to make chocolate donuts)
1egg
Preheat oven 325
Spray donut pan with baking spray
Mix flour, cocoa, baking powder, baking soda along with sugar nutmeg cinnamon and salt. In a separate bowl combine buttermilk, yogurt, extract and egg. Then mix with dry ingredients until just combined.
Fill donut pan about 1/2 way. I baked 4 large donuts and 12 mini donuts with this recipe. I overfilled some of the mini donuts 🙂 I may have been able to bake all 6 large donuts otherwise.
Bake mini donuts for about 8 minutes, large donuts took about 10 minutes. Do not overbake.

 

Mint Icing
1 cup powdered sugar
2 Tablespoons Creme de Menthe- you could use mint extract and green food coloring
1 Tablespoon water
Decorate when wet with mini chocolate chips or chocolate jimmies.

you can find donut pans online and in baking area of stores to make great baked donuts.
