shredded beef

I really enjoy shredded beef tacos. 
I made the shredded beef in the crock pot.
After searing the outside of the beef in a frying pan
I added it to the crock pot with beef broth
chopped garlic and a small onion diced
The meat was a bottom round roast.
It was in the crock pot for 7 hours.
 
 I made tacos-but ate them so fast I didn’t get a photo taken
{I have a problem remembering to take photos when I’m really hungry}
but I remembered to take a photo of the beef.
 
I shredded the beef with two forks
and was happy that there was plenty left over
 to enjoy this for a snack
nachos
I loaded the plate with tortilla chips,
layered on the shredded beef
 added some refried beans,
fresh cilantro,
 black olives,
 cheddar cheese,
 and Cotija cheese,
if you haven’t tried this cheese before it’s like a Mexican version of feta cheese, but dryer and not as tangy. It’s my favorite Mexican cheese.
Heated it until the cheese was melted.
What a delicious snack.

    Cotija cheese is the perfect cheese for nachos…so authentic! They look scrumptious!

    DAh! never thought of shredded beef on nachos! Sounds yummy! We raise our own beef, and sometimes if we slaughter a bull it is tough tough tough, but hours in the crock makes wonderful shredded beef.

    Looks so good! My kids love tacos and anything Mexican. I will definitely have to try them with the shredded beef…I bet it is so flavorful!

    The best tacos are with shredded beef! The slow cooked shredded beef and those nachos look delicious! I've gotta try it in the crock pot.
