Mini Apple Crisp Pie

Tidymom is having a Love the Pie! Party today and I thought I would join in the fun with my
 Mini Apple Crisp Pie 
The only requirement was that the pie had to be made with a Pillsbury pie crust.

I rolled out the Pillsbury pie crust a bit and cut circles with a 3′ cookie cutter

tucked them neatly into the cupcake/muffin pan

then made the filling
6 apples, (I used 4 Granny Smith and 2 Rome)
2 Tablespoons cinnamon
1 1/2 cups sugar
3/4 cups instant oatmeal
1/2 cup flour
3/4 cup butter
I made this a very quick version added all ingredients to bowl and stirred (see really easy)
 scooped the filling into the cute mini pie cups and baked for 20 minutes at 350
 
and while they were still warm I topped them with powdered sugar and what goes better with hot apple pie than a nice scoop of vanilla ice cream

Very quick and simple
 I made it along with dinner and baked them while we ate and had hot pie right out of the oven
the camera lens kept steaming up while I was taking the photo 🙂

    I read your profile that you're an East coast girl too. I moved from Maine to California in 1996 and never looked back!

    I wish I could use Pillsbury crusts… they seem so easy to use (I really do not like making crusts).
