How to Make Apple Cheddar Quesadillas

  • Cheddar cheese
    Sharp cheddar is my favorite because its stronger flavor pairs so well with the apple. You can use mild cheddar if that’s what your family prefers.
  • Granny Smith apple
    Thinly slice the apple so it warms slightly inside the quesadilla without becoming mushy. You can also use your favorite apple. Core the apple, then slice into rings, or cut the apple in half, remove the core and seeds, and slice.

How to make Apple Cheddar Quesadillas

Place a flour tortilla in a skillet over medium heat.

Add shredded cheddar cheese over half of the tortilla and arrange thinly sliced apple over the cheese.

Fold the tortilla in half and cook until the bottom is lightly toasted and the cheese is beginning to melt. Flip and continue cooking until the other side is golden and the cheese is completely melted.

Remove from the skillet, let it sit for a minute or two, then slice into wedges.

Tip: Don’t overload the quesadilla. A thin layer of cheese and apples gives you the best ratio and makes it easier to flip.

Make it your own

This is one of those recipes where you can easily switch things up depending on what you have.

Try a different apple, swap cheddar for another cheese, or add a little cinnamon if you want to lean into the sweet side. A sprinkle of cooked bacon would also be delicious, or add some caramelized onions if you’re looking for an extra savory version.

Ingredients

  • 2 8" Flour tortillas
  • 3/4 cup Cheddar cheese, shredded or sliced
  • 1/4 medium Granny Smith apple, thinly sliced

Instructions

  • Gather the ingredients, have a skillet ready, and a little bit of oil or butter if desired. You can heat them in a nonstick skillet without using oil/butter.
  • Heat a skillet over medium heat.
  • Place a tortilla in the skillet and add cheddar cheese, some thinly sliced apple, and more cheese on top (so the cheese "sticks" to both inner areas of the tortilla, which will help the apple stay put. (Alternatively, use one tortilla and fold it in half, which can be easier to flip)
  • Cook until golden on the bottom, and the cheese begins to melt. Use a lid if the cheese needs a little more help melting.
  • Flip and cook the other side until toasted, and the cheese is melted.
  • Remove from the skillet, slice into wedges, and serve.

  3. These sound great, and I like that you use a corn tortilla. This reminds me that when my daughter was younger she used to live on cheese quesadillas. I wish I’d known about these earlier, at least she’d have gotten some fruit! Living in CA we had to endure those scorching hot early school days…no fun for any of us.
