I am asked this often,
“mom can you make meatloaf cupcakes?”
This is quick and easy
1 lb ground beef
1/4 cup parmesan cheese
1/4 cup Italian style breadcrumbs
mix all together and portion out into a cupcake pan
bake at 375 degrees until the internal temp. is 160
I prepare mashed potatoes and place them in a large ziploc bag
with a 1M tip
and then pipe the mashed potato“frosting”
onto the meatloaf “cupcakes”
and top with grated carrot “sprinkles”
I was going to roast the brussel sprouts in the oven but ran out of time
so I did them in a skillet on top of the stove, with a little olive oil, salt and pepper.
I made a triple batch and froze 1/2 of them so everyone can enjoy them again real soon.
