I love margaritas, especially the salt!

I’m sure I’ve mentioned I love salty treats, margaritas are no different. Even if they are fruit margaritas I still prefer them salted. I recently had a melon margarita with a salted rim…..YUM!

I’ve made margarita cupcakes a few times and even blogged about them back in August of 2010, with Cinco de Mayo this weekend I thought I’d look up that post and reminisce about how delicious they are and maybe share them again on facebook for anyone looking for a fun cupcakes for a party or get together this weekend.

Margarita Cupcakes

Ingredients

  • Margarita Cupcake Recipe
  • 1/2 cup unsalted butter room temperature
  • 2/3 cups sugar
  • 3 eggs room temperature
  • 1 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp salt
  • Zest of two limes
  • 1/4 cup fresh lime juice I use the two limes I zested you could substitute with ¼ cup margarita mix (the liquid prepared type)
  • I’ve made these cupcakes both ways and they were equally delicious

Instructions

  • Beat the butter until pale, then add the sugar. Add one egg at a time, blend until all incorporated. Then add in flour baking powder and salt, followed by the lime juice or margarita mix. Then add the zest.
  • Fill lined cupcake pan with batter 2/3 full. Bake at 350 for 18 minutes.
  • Makes 12 cupcakes. This recipe easily doubles if needed.
  • Having your butter at room temperature helps it to beat smooth, and eggs at room temperature prevent the cake from becoming too dry. (You can easily place the eggs in their shell in warm water for 2 minutes or take them out of the refrigerator for 30 minutes)
  • **If you want to make Margarita cupcakes from a box cake mix, substitute the water for margarita mix, or lime juice and add lime zest.

Margarita Frosting

Ingredients

  • 1/2 cup butter room temperature
  • 1/2 cup shortening
  • 4-5 cups powdered sugar
  • 2 T. Tequila Use margarita mix to substitute the Tequila and lime juice if you prefer or want an alcohol free version
  • 1 T. fresh lime juice

Instructions

  • Beat butter and shortening until smooth, then add powdered sugar along with tequila and lime juice or margarita mix. I added a drop of green and a drop of yellow food coloring to achieve the light, lime colored green frosting. Once you’ve frosted the cupcakes sprinkle on with coarse salt.

    Just stumbled upon your recipe for these after I had some strawberry margarita mini-muffins at a wedding recently. I tried your recipe (with store-bought strawberry cake mix) and the cupcakes turned out great! Awesome recipe. Thanks so much for sharing!

    1. for the frosting? Yes you can use all butter. I made these in the summer and it’s easily over 100 degrees here everyday so I have to use 1/2 shortening or they would just completely melt 🙂

  7. I haven’t made these yet, but i just happened to come across them in my search for margarita cupcakes. I was just wondering, have you tried doing 1/8 c. lime juice and 1/8 c. margarita mix? i was just wondering how it would come out if you did that way instead of 1/4 of one or the other.

    1. I’m sure that would be just fine to make that adjustment. I’ve made them with all lime juice, all margarita mix. You can substitute the liquid out for what is your preference. Even add some Tequilla if you prefer.

  9. I had a question on the frosting recipe. It states that the cake recipe makes 12 cupcakes. The frosting appears to make more than enough to cover 12 cupcakes. I recently made another homemade frosting and there was only 2 C of conf. sugar in it and it frosted a whole cake and more.

    1. It really depends on how much frosting you put onto each cupcake. If you spread it on, or pipe it on. Spreading will use much less. Piping often takes 1/4 cup per cupcake. When I wrote this recipe I do not recall having any leftover frosting. If you are not piping on the frosting, go ahead and cut the recipe in half. The amount of powdered sugar varies by recipe and how thick you want the frosting. If you want to compare the recipe you previously make, compare the butter/shortening portion, that will give you better idea of how much frosting each makes.

    2. That makes a lot of sense. I intended to spread it on due to the fact that I have never tried to pipe frosting on. I will have to see how adventurous I feel. I am making them today for a belated Cinco De Mayo get together.

    3. Good luck with them, the simplest piping is with a large round tip or just cut a hole in the end of a piping bag and hold the tip 1/2″ off the cupcake and as you apple pressure it will fill the cupcake area and look like a smooth mound of frosting. Hope that helps 🙂

  10. Hello! It’s my first time here and these cupcakes simply look delicious! I really want to try them for cinco de mayo (in a couple of days). Reading the recipe it says 2 T. Tequila… would that be “Tablespoons” or “Teaspoons”? Sorry, I’m new here and also this is my new hobby!! I would greatly appreciate your answer. Thank you and have an excellent day!

  11. Excellent recipe. I have a doubt in the frosting which lists 2 T. Tequila and 1T . fresh lime juice . That is T. ? cup, tablespoon ?

  12. Hi, I wanted to make these for my mum on mothers day and I was just wondering, in your recipe its says Bake at 350 for 18 minutes. My question is, is it 350 degrees or Fahrenheit? And if it is degrees, is in in fan forced or regular?

    1. Yes, it’s 350 degrees Fahrenheit. No fan or forced air, just baked in a traditional oven. My oven is electric.

  13. I added tequila to the cupcake & used triple sec & Grand Marnier in the frosting.. got lots of compliments.
