making DEVILED Eggs

A deviled egg recipe that is tasty and delicious

Ingredients

  • for each dozen eggs, you'll use 1/4 cup Greek yogurt
  • and 1 tablespoon mayonnaise
  • 1/2 teaspoon dry mustard, or prepared mustard
  • pinch salt and pepper

Alternatively you can use all mayo

Instructions

  • Slice the eggs in half.
  • In a medium bowl, place the egg yolks of the hard boiled eggs.
  • Mix well with a fork or pastry cutter, or place in a food processor.
  • Add the remaining ingredients and mix until desired smoothness.
  • If mixing by hand and want to remove more lumps, press the mixture through a strainer.
  • Place the mixture into a piping bag fitted with a star tip, I used a #857 piping tip.
  • pipe mixture onto each sliced egg half, and add chopped scallions on top.
  • Store in the fridge until ready to serve.
