Greek Chicken Salad

Fresh vegetables with Greek chicken to make a flavor explosion in every bite

Ingredients

  • 1-2 heads Green Leaf Lettuce cut into 2 inch pieces
  • 1 lb cooked chicken cut into strips
  • 1/2-3/4 cup feta cheese
  • 1/2 red onion , diced
  • 1 english cucumber, quartered
  • 1 cup grape tomateos sliced in quarters lenghwise
  • 1/2 cup Kalamata Olives
  • 1/4 cup drained pepperoncini peppers
  • 1 teaspoon fresh oregano, for garnish

Instructions

  • Arrange lettuce on platter
  • Cut chicken into bite sized pieces and toss chicken in 1/4 cup Greek Tomato Dressing (recipe in this post)
  • Add fresh oregano to chicken
  • Arrange salad with all the items placed in piles over the lettuce
  • Place platter in fridge until ready to serve.
  • Serve dressing on the side, or toss the salad with dressing just before serving.
