Greek Chicken Salad
Fresh vegetables with Greek chicken to make a flavor explosion in every bite
- 1-2 heads Green Leaf Lettuce cut into 2 inch pieces
- 1 lb cooked chicken cut into strips
- 1/2-3/4 cup feta cheese
- 1/2 red onion , diced
- 1 english cucumber, quartered
- 1 cup grape tomateos sliced in quarters lenghwise
- 1/2 cup Kalamata Olives
- 1/4 cup drained pepperoncini peppers
- 1 teaspoon fresh oregano, for garnish
Arrange lettuce on platter
Cut chicken into bite sized pieces and toss chicken in 1/4 cup Greek Tomato Dressing (recipe in this post)
Add fresh oregano to chicken
Arrange salad with all the items placed in piles over the lettuce
Place platter in fridge until ready to serve.
Serve dressing on the side, or toss the salad with dressing just before serving.
