Chocolate Almond "Wedding" Cookies

A delicious chocolate version of the classic wedding cookie or tea cake, these chocolate almond cookies will be your new favorite. And make great Christmas Cookies!

Ingredients

  • 1 ½ cups butter
  • 1 cup powdered sugar
  • 5 tablespoons unsweetened cocoa I use dutch process cocoa
  • 3 cups flour
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract
  • ½ teaspoon almond extract
  • 1 cup almonds chopped

Coating for baked cookies

  • 1 cup powdered sugar
  • 3 tablespoons unsweetened cocoa

Instructions

  • In the bowl of a mixer, beat the butter, powdered sugar, and cocoa together until well blended.
  • Next, mix in the flour and salt. Then add the vanilla and almond extract with the chopped almonds. Mix until everything is incorporated and a soft cookie dough is formed.
  • Roll the dough into 1 tablespoon-sized balls and place them on a parchment lined baking sheet
  • Bake at 325· for 15 minutes. You don't want to overbake these cookies because that can make them dry instead of tender.
  • Once you have taken the cookies from the oven, let them cool for about 5 minutes.

  • Place the cocoa and powdered sugar into a bowl and mix well
  • Roll each cookie into the cocoa mixture. Then coat them again. so they are completely covered.
