greek no mayo potato salad
Delicious lemon and oil potato salad is the perfect side dish to serve all year. No mayo potato salad.

- 2 lbs mini gold potatoes cut in half or large gold potatoes cut to the desired size
- 1/4 cup avocado/olive oil
- 3-6 tablespoons fresh lemon juice
- 1/4 cup fresh chopped parsley
- 1/4 cup diced red onion
- 1 teaspoon dry oregano
- 1/2 teaspoon minced garlic
- 1 teaspoon coarse kosher salt
- 1/3 teaspoon black pepper
- optional- add 2 tablespoons capers
In a large pot add cut potatoes, and cover with water.
Bring to a boil with a teaspoon of coarse kosher salt. Boil about 10-15 minutes until fork tender (smaller potatoes will cook quicker).
Drain potatoes.
In a bowl mix the remaining ingredients, mix well. Toss over the cooked potatoes.
Mash about 10 potatoes and add any additional lemon juice if desired.
Serve or chill.
