Beer and Cheese Dip

Ingredients

beer

cream cheese
1 1/2
cups
grated cheddar cheese
I used Kerrygold Dubliner

scallion
diced

*jalapeño diced optional

tablespoon
olive oil
Instructions
In a medium saucepan on medium-high place oil and scallions, {add in jalapeño or some crushed red pepper if you like it spicy)
then add beer and cream cheese and whisk until smooth
add in cheddar and whisk and return to heat for a minute
Serve warm for dipping or cold it will easily spread onto crackers
Notes
I typically use Coors light beer when making this recipe. The flavor comes through nicely without overpowering the cheese.
