Pineapple Sandwich Cookies

Servings: 48 cookies, 24 sandwich cookies

Ingredients

  • 1 cup butter
  • 1 1/2 cups powdered sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 teaspoon pineapple extract
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  • Beat butter with powdered sugar and blend well.
  • Mix in egg and extracts, then add in flour, baking powder, and salt.
  • Blend on medium until the dough is well combined.
  • Roll cookie dough out 1/4" thick and cut with desired cookie cutter.
  • Bake at 400 degrees for 7-8 minutes, the bottoms of the cookies will be lightly golden the tops will stay light in color.
  • Allow cookies to completely cool on baking sheet.
