Carrot Cake Oatmeal Cookies

Servings: 28 cookies

Ingredients

  • 1 cup butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup grated carrots about 2 medium carrots
  • 1 cup oats not quick cook oats
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  • In a large mixer bowl beat butter with sugars.
  • Add in egg and vanilla and mix on medium until combined.
  • Add flour, baking soda, baking powder and mix on medium low until well mixed.
  • Add in carrots, oats, cinnamon and nutmeg and mix until completely combined.
  • Place two tablespoon sized scoops of cookie dough onto parchment lined baking sheets.
  • Bake at 375 degrees for 12-14 minutes or until bottoms of cookies are golden brown and slightly firm.
  • Allow cookies to cool completely on baking sheets.
