Small Batch Funfetti Cupcakes

Ingredients

  • ½ cup sugar
  • 1 eggs
  • ¾ cup flour
  • ¼ cup milk
  • 2 tablespoons butter melted
  • 1 tablespoons oil
  • 1 teaspoon baking powder
  • 1 teaspoons vanilla bean paste or vanilla extract
  • 3 tablespoons rainbow sprinkles

Instructions

  • Preheat oven to 375°
  • In a large bowl whisk sugar with eggs.
  • Add in flour, milk, butter, oil, baking powder and vanilla until it's all smooth and well blended.
  • Add in the sprinkles.
  • Place 3 tablespoons of batter into each of the cupcake liners.
  • Bake for 18-20 minutes or until toothpick comes out clean.
  • Cool cupcakes for 5 minutes in the pan, then remove cupcakes and place on a cooling rack to cool completely before frosting.
