small batch Chocolate Fudge Frosting

a small batch of chocolate fudge frosting great for making a naked cake, a dozen cupcakes or to spread on the top of a smaller cake. with a deliciously smooth rich flavor it's bound to become your favorite frosting.

Ingredients

  • 4 tablespoons butter
  • 3 oz chocolate chips
  • 1 teaspoon vanilla
  • 3 cups powdered sugar
  • 1/4 cup milk
  • salt add a pinch of salt if you use unsalted butter

Instructions

  • Be sure to melt the butter first, don't boil it, just heat it until it's melted.
  • I melt butter in my microwave for 30 seconds in a microwave-safe bowl.
  • Next, add in the chocolate chips, stir them into the butter until the chips are melted, if they don't melt completely, microwave for 10 seconds as necessary, don't overheat be sure to keep stirring so the chocolate melts. Do this until the chocolate and butter melt together and when stirred are thick and glossy.
  • This can also be heated in a pan on the stove, on low heat.
  • With a mixer and large bowl, place the chocolate mixture in the bowl.
  • Add in the powdered sugar, vanilla, and salt and beat while adding in the heavy cream until it's thick and smooth.

Notes

unsweetened cocoa 1/4 cup can be used if you don't have chocolate with 1 tablespoon butter added so it's smooth and creamy.
