When you make the frosting for the filling it’s a buttercream frosting, you mix it well, and the jam is cooked so the pineapple breaks down soft, once it’s blended into the frosting it’s smooth.

These sound delicious but I have a question about the feeling. He said it’s supposed to be smooth and silky but you added jam made with crushed pineapple and that’s lumpy. How do you get it through the decorating tip?

Thanks for a such a great recipe, I just love pineapple and these cookies are so delicious, I like that they aren’t too sweet, and the addition of the pineapple filling is amazing… these are definitely my new favorite! I’m making another batch tomorrow.

There’s no link for your pineapple jam recipe, it just says (my homemade pineapple jam recipe here) with no link. These sound great though, can’t wait to give them a try!

sorry, I don’t bake for others… the pineapple extract would be available at a bakery store (sometimes craft stores like Hobby lobby/Joann’s will have some) or it’s available on amazing here https://amzn.to/2ntujCH

It’s 400° Fahrenheit. (I’m not sure about you but my oven wouldn’t go to 725° celsius :), happy to answer the question though, I’m in the US and we use F° for cooking.
