You could freeze it, just place it in a zip loc bag and remove excess air. I would think it would be good for a few weeks in the freezer. Alternatively you could make a smaller batch, just cut everything in half. I do freeze avocados with good results. Do you think this would freeze well? It looks delicious but since I am the only avocado lover in this family, I would need to freeze it in smaller quantities.
