If you haven’t tried 1 and 1/2 tablespoons of baking soda rather than tspoons, I really encourage it. Mine were thick and lite and fluffy even after giving my own flare to it. I think you will love the recipe, and dont be afraid to pile on the fruit and topping, it will hold up and not get real soggy.

I think the 1 1/2 tblsp. Of baking powder was a great idea ! I also added 2/3 cup of oatmeal and they came out so thick and beautiful even after adding slightly more water to compensate for moisture absorbed by the oatmeal until the batter was just thin enough to pour from a one cup measure so it spread in the pan. YUM ! they even held up to my home made thinner syrup. They don’t sog out. Oatmeal was originally just for a more wholesome pancake, but it worked in so well ! They’re very versatile ! Cant wait for fresh strawberries!

I’m a bit late to this one, just found it now. Fantastic pancake recipe Diane. I must admit I was concerned as the proportions are different to other recipes I have used. The melted butter really adds something. I like how the batter is thinner, the pancake cooks more evenly and I don’t end up with a stodgy middle. I also found that if the mixture sits for 10-15 minutes before cooking my pancakes were more fluffy, everyone loves them either way.
