Let’s see, I have one eggy dish that you could omit the ham in its Eggs Benedict Enchiladas https://www.createdby-diane.com/2015/12/eggs-benedict-enchiladas.html
other options are quiche or you could bake the eggs in tortillas like I did here https://www.createdby-diane.com/2012/01/baked-huevos-rancheros.html/

Hi Diane,

I wa thinking of a corn based recipe this week and I’m saving the good options this coming Easter. Luckily your recip has to offer something good to serve on the table.
I’d definitely pair it with some vegetarian paella. Now one more problem is what egg dish can I probably check out in order to match the Easter theme? Any suggestions? Hahaha.. Thanks by the way for the post!

Your Corn Bread Pudding recipe doesn’t include sugar in the ingredients but in the instructions it says to add sugar when adding milk, eggs, etc. How much sugar is required in this recipe. I would like to make it this weekend but do’t know how much sugar.
