Chocolate Chip Pancake Mix Scones

If you've got pancake mix, you can make these easy glazed chocolate chip scones great for breakfast or a snack, they taste amazing.

Ingredients

  • 2 cups complete pancake mix I use Krustez
  • 1 teaspoon baking powder
  • 1 1/2 tablespoons sugar
  • 1/2 cup heavy cream +2 tablespoons
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

Glaze Icing (double this is you want a lot of glaze icing)

  • 1/2 cup powdered sugar
  • 1 tablespoon warm water

Instructions

  • Preheat oven to 400°.
  • In a medium bowl mix the pancakes mix, baking powder, sugar together with a whisk, this will lighten up the pancake mix and make it all fluffy.
  • Then add in the heavy cream, egg, and vanilla and mix just until half combined.
  • Then add in the mini chocolate chips and continue mixing until the batter is just combined, it will not be smooth. (by not over mixing the dough the scones will be fluffy otherwise they'll be tough)
  • Pat the mixture into a circle in a skillet or on a parchment-lined baking pan and score it into 4 pieces with a knife or pastry cutter.
  • Brush the top of the batter with the remaining 2 tablespoons of heavy cream.
  • Bake for 20 minutes.
  • Test scones for doneness with a toothpick come out clean.
  • Allow scones to cool for a few minutes.

mix the icing of powdered sugar and warm water until smooth.

  • Pour glaze icing over scones that have been cooled for at least 5 minutes or longer.
