Creamy Chicken and Rice

This creamy delicious chicken and rice dish is ready in under 30 minutes and has a great flavor of garlic, Romano cheese, and bacon.

Ingredients

  • 1 tablespoon butter
  • cup chopped onion
  • 2 -3 cloves garlic sliced
  • 1 lb boneless skinless chicken breasts sliced thin
  • 1 cup rice I use basmati
  • 3 cups chicken broth
  • 1/2 teaspoon salt
  • 2-4 oz cooked bacon chopped
  • 1/3 cup heavy cream
  • 2 oz grated Romano cheese
  • 2-3 teaspoon chicken bouillon or more for desired flavor
  • 1 cup mild shredded white cheese cheddar, Monterey Jack, or similar
  • salt and pepper to taste

Topping

  • additional Romano cheese
  • cooked bacon crumbled

Instructions

  • In a 3-4 quart pot over medium-high heat saute butter with onion and garlic for 1 minute.
  • Add in the chicken and rice and stir it with the chicken broth, add a 1/2 teaspoon salt.
  • Cover with a lid.
  • Set a timer for 20 minutes.
  • You'll bring everything to a boil, then immediately turn to low.
  • When your timer goes off, remove the lid.
  • Stir in the cheeses, bacon, and heavy cream, and chicken bouillon.
  • It's ready to serve.
  • Top with additional cheese and bacon.
