Vegetable, canola or corn oil can be used as well as avocado oil (my personal favorite).

You said that you can bake these in batches if needed. So if you could only fit half of them in your oven, is it OK to leave the other two sit on top of your counter until the first ones are done? I made this cake this weekend but was nervous to not bake it right away so I cut the recipe in half and made it two times so I could put the pans in the oven right away (it did take about 43 minutes to bake each batch) and they turned out amazing!! everyone was raving about how moist this cake was!! thank you for this amazing recipe and for your help!

The recipes are correct as written, multiplying exactly does not always work in baking. I’ve made each recipes multiple times as written to ensure success :)

I noticed that the two layer white sour cream cake recipe has 1 1/4 c water and the 5 layer has 2 2/3c water plus the amount of oil is 2 Tbsp for both. But all the other ingredients are double what the two layer recipe calls for. Is this correct? Thank you! I’m excited to try this cake!

I would bake it at 325, or else I thnk the white cake will get too golden brown in color if baked at the higher temperature.

Yes you can use any cake pan size, adjust baking time accordingly. If you want to maintain 2inch high cake layers you will probably only need 4 9” pans. Or use 5 pans for thinner layers.
