One of the best parts about mini baked Alaskas is you can make them and keep them in the freezer for any time snacking… 

to serve after dinner, everyone will give them rave reviews!

If they last long enough you can have one for the perfect midnight snack, knowing it’s in the freezer may even wake you up in the middle of the night thinking about it!

They won’t last long, trust me, they are so delicious.

Who doesn’t love the combination of chocolate, graham cracker, and marshmallow, right!

It’s a childhood treat that follows you into adulthood and every time you have one reminds you of happy moments.

 I’ve added a bit of sophistication to it with Italian Meringue. I’ll be showing you how to whip up a light and creamy meringue that will become a new favorite way to enjoy the s’ more flavor.

This cake is really the perfect ANYTIME cake, it’s a single layer cake perfect for smaller celebrating, weeknight dessert, or bring it along with you on a small outing, camping trip, or RV adventure!

Chocolate is one of my favorites, I’m not picky. I like it on its own or enjoyed in cookies – like these Spritz Cookies with Whipped Chocolate Ganache,  brownie cookies, or enjoyed one bite at a time in my chocolate mousse.

And paired with this home-made meringue recipe, you can’t go wrong!

Now, what will you use this Italian Meringue on,

oh, I have these two recipes to get your stated… 

this meringue is so creamy and delicious and far different than the foamy type that is typically on lemon meringue pie and such. 

This is a meringue…like no other,  the texture and taste is something I wish I knew about years ago, it’s so good you’ll want to eat it off a spoon!

There are a few types of meringue, and each brings a little something different. Here we will focus on Italian Meringue, which is a little softer in nature, and creamier.

There is no need to think that this will be complicated or take a ton of time…

• First, there is nothing like an impressive dessert that isn’t complicated.
• Second, you can make this a day ahead of time which is great.
• And third, just wait until you scoop out your first spoonful and take a bite… it’s delicious.

These easy make-ahead s’ mores will soon become a favorite, I’m sure of it! Using graham crackers and this homemade marshmallow frosting, you’ll be wanting Some-more real soon!

Once you see how EASY these are to make you will make them all the time.

The graham crackers are filled with marshmallow frosting,

then dipped in melted chocolate.

They are fantastic and you can make them ahead of time! BONUS!!

I hid one in the fridge to see how long it would stay “good” for. I got hungry just thinking about it and ATE it on day 5, really one of these lasted in my fridge for 5 days… I think there may be an award in order for not eating it sooner!

I also put one in the freezer, and WOW is that great too.

These are going to be great at parties, especially GAME DAY there is no need to look away from the TV, just make these ahead of time and you’re all set.

These S more pies are no-bake and can be made quickly. With rich delicious chocolate ganache, these are decadent!   

This easy smore pie recipe can be ready in minutes… and that is one of the things that makes it my favorite!

You won’t believe how easy these are to make and how incredibly delicious they are.

These really are no-bake pies, if you torch the marshmallows with a handheld torch.

You can put them under the broiler to toast the marshmallow, which contradicts the no-bake part, BUT if a minute or two in the oven counts as baking so be it!

to me, they count as no-bake…since they don’t bake for 30 minutes.

You could also toast the marshmallows over an open fire on a skewer and place them on top of the chocolate, the marshmallow will stick to the chocolate as soon as it melts the chocolate a little bit.

will have you wanting MORE!

After all that is what S’more are known for.

These are like super-hero S’mores,

they have all the traditional components are the classic,

but get kicked up with the delicious flavor of peanut butter.

I will mention that the chocolate marshmallow cream is OUT of the Universe delicious, since I brought up the whole super-hero subject.

These could possibly be just what every super-hero at heart needs to feed our super human powers.

These just may be the easiest S’more Cupcakes ever,

I made many batches, to be sure there was enough graham cracker goodness in every bite.

That there was plenty marshmallow and

just like when roasted marshmallows timing matters,

no fancy tools needed..

these are EASY!

It’s no secret I LOVE snacking.

I don’t know how some people survive eating only 3 meals a day.

I think I would collapse.

I snack everyday, at home, on the go, at parties, in the morning, in the evening and well anytime in between is snacking time to me too.

Who could resist this cute little cup full of yumminess.

Not me!

I don’t know about you but sometimes I like to take it easy!

I really want to a yummy, easy dessert, but I don’t really want to mess up the whole kitchen just to enjoy some chocolate deliciousness.

Yeah, I’m lazy that way.

I don’t always want to do dishes!

I’m not alone, right?

Well don’t worry about the dishes on this one…

there are only a couple.

You’ll need a brownie mix, a graham cracker crust, frosting and mini marshmallows.

Mix frosting with melted mini marshmallows for this easy and tasty frosting.

Pile on the mini marshmallows and heat up the broiler.

Be sure to keep an eye on the marshmallows under the broiler, you don’t want to set off the smoke detector!

S'more Brownie Pie

Ingredients

• 1 box brownie mix-and ingredients to prepare Betty Crocker
• 1 graham cracker crust
• 6 oz white frosting 1/2 container Betty Crocker whipped white
• 21/2 cups mini marshmallows

Instructions

• Prepare brownie mix according to package directions.
• Pour into graham cracker crust
• Bake at 350 degrees for 40-50 minutes or until brownie is baked, but not over done or it will be dry.
• Allow brownie to cool for 5 minutes.
• Heat 1 cup mini marshmallows in microwave for 20 seconds or until soft and spreadable, mix those with the frosting and spread on top of the brownie.
• Add 1 cup marshmallows to top and put under broiler for a minute. Really it only takes a minute don't walk away and burn them.
• Slice and serve warm.

The icing on these is so yummy, you may think you want to skip that step, but trust me….you’ll want it!

I told you it was easy!

It’s just the perfect snack and you won’ mess up the whole kitchen making it, it’s a WIN-WIN!
