Yes, you can use any variety of pineapple you prefer and yes, you can can them for longer shelf life.

Can you use tidbit pineapple? Also can you do a waterbath once in the jars and preserve for a longer shelf life instead of having to keep it in the refrigerator? Thanks for this awesome recipe. I look so forward to trying this!
