Gingerbread Biscotti
Ingredients
  • ¼ cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons molasses
  • 1 teaspoon pumpkin pie spice
  • 2½ cups flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
Instructions
  1. Beat butter with sugar, mix in eggs one at a time.
  2. Blend in vanilla, molasses and pumpkin pie spice.
  3. In large bowl combine, flour, baking powder, salt.
  4. Add in dry ingredients one cup at a time.
  5. Knead dough and separate into two logs.
  6. Bake at 350 preheated oven for 35 minutes or until bottoms are firm and lightly golden.
  7. Remove from oven and when cool to tough slice with a serrated knife and lay pieced on their sides on baking sheet.
  8. Bake slices for 10 to 15 minutes.
  9. Cool Biscotti on cooling rack
  10. Mix up icing
