Lemon Saffron Salad Dressing
Serves: 32 tablespoons
  • 1 cup fresh squeezed lemon juice
  • 2 teaspoon Gourmet Gardens Garlic Paste or 2 small cloves garlic minced fine
  • 1/2 cup olive oil
  • 1/2 cup white wine vinegar
  • 6 threads saffron
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  1. Heat oil with garlic on low for just a minute.
  2. Remove from stove.
  3. Depending on which lemons I used, if they were sweeter I didn't need to heat the lemon. If I used tangy lemons I heated the lemon juice with the oil and garlic.
  4. In a mortar and pestle grind the spices fine.
  5. Add the spices to the oil and garlic mixture along with lemon.
  6. Add the vinegar.
  7. Mix thoroughly.
