Horchata Cookies
Ingredients
  • ¾ cup butter
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 2 eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Horchata Extract
  • ¼ teaspoon ground nutmeg
  • ¼ cup instant vanilla pudding mix
  • 1 teaspoon baking soda
  • 2⅓ cups flour
Cinnamon Sugar Mixture
  • ¼ cup powdered sugar
  • ½ teaspoon cinnamon
Instructions
  1. Cream butter with sugars.
  2. Add in eggs, extracts, nutmeg and pudding mix.
  3. Mix in flour and baking soda.
  4. Use a medium 2 tablespoon scoop to form cookies.
  5. Mix powdered sugar with cinnamon.
  6. Roll cookie dough into a ball and roll into cinnamon sugar mixture
  7. Place balls of cookie dough on parchment lined baking sheet.
  8. Then press lightly with the bottom of a smooth bottom glass or measuring cup.
  9. bake for 8-10 minutes until set and firm on the bottom.
  10. Allow cookies to cool on baking sheet.
  11. Then dust the tops of cookies with additional cinnamon sugar mixture.
