Pie Cookies... who would have thought how WONDERFUL they would be.Cherry Pie Cookies
- 1 cup butter
- 1 ½ cups powdered sugar
- 1 egg
- 2 teaspoon vanilla bean paste or vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 21oz. can cherry pie filling
- Buttercream Frosting:
- 1 cup shortening
- 2 1/2 cups powdered sugar
- 2 tablespoons heavy cream
- Cream together butter and sugar.
- Add egg and vanilla.
- Mix in flour, baking powder, and salt.
- Mix until the dough forms a ball on the paddle.
- Press 3 tablespoons of dough into each section of the Muffin Top Pan.
- Bake at 375 degrees for 10 minutes.
- Let cool completely
- Beat Shortening, powdered sugar and cream until smooth and place into a piping bag fitted with #21 tip.
- Add 8 cherries to each cookie.
- Pipe edge around each cookie with buttercream frosting.
