A delicious and simple layer cake made out of 1 8" round chocolate cake, layered with cherry frosting and topped with vanilla frosting and chocolate curls and maraschino cherries. Ingredients
Recipe type: Dessert, Cake
Cuisine: American
Serves: 8-10 servings
  • ½ cup butter, softened
  • ¾ cups granulated sugar
  • 1 egg
  • 1 teaspoons vanilla
  • 1 teaspoon cherry extract, if desired
  • 1 cup all-purpose flour
  • ¼ cup dutch process cocoa, or unsweetened cocoa
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup buttermilk (or ¼ cup milk and 2 teaspoons vinegar blended)
  • ¼ cup boiling water
  • 2 tablespoons of maraschino cherry juice can be added, just reduce the water by the 2 tablespoons if you add the cherry juice.
  1. Preheat oven to 350°.
  2. Prepare an 8" round cake pan with a baking spray or oil and flour pan, so the cake releases easily (I use Baklene)
  3. In a medium bowl add butter and sugar and whisk until well blended.
  4. Add in the egg along with vanilla and cherry extract if using, mix to combine.
  5. Add in cocoa, baking soda, salt, and stir in flour
  6. Add in buttermilk and stir,
  7. then add in water and cherry juice, whisk until smooth.
  8. Pour batter into prepared baking pan (wrap with a wet baking strip to bake cake evenly)
  9. Bake at 350° for 33-35 minutes or until a toothpick comes out clean.
  10. Remove cake from oven and allow to cool for 10 minutes then place wax paper over the top of the cake to turn cake onto a cooling rack.
  11. Cool cake completely before applying any frosting.
