Bacon and Egg Cauliflower Fried Rice
Serves: 4 servings
  • 2 teaspoons sesame oil (or a tablespoon of soy sauce)
  • 16 oz diced cauliflower
  • 4 eggs
  • 2 tablespoons water
  • 5 slices of bacon, chopped
  • 2 green onions, chopped
  • Salt and pepper to taste
  1. In a skillet over high heat place 2 teaspoons sesame oil, cook the pieces of bacon until crisp.
  2. Add in the cauliflower and stir.
  3. Then mix the water with the eggs until smooth.
  4. Pour the egg mixture into the pan and coat the cauliflower, stir to combine and then spread evenly and place a lid on the pan to cook.
  5. Add some green onions.
  6. Add salt and pepper to taste. (if you're using soy sauce add that at the end of cooking)
